Beets were a popular vegetable in our house when I was growing up, and this recipe is a real favorite of ours. It's very easy to make, and the orange gives it a delightful citrus flavor. -Susan Punzal, Orchard Park, New York

3/4 cup orange marmalade
6 tablespoons orange juice
1/3 cup butter, cubed
1/4 teaspoon salt
1/4 teaspoon pepper
3 cans (14-1/2 ounces each) sliced beets, drained

Steps:

  • In a large skillet, combine the first 5 ingredients. Bring to a boil; cook and stir until thickened, 3-4 minutes. Add the beets; cook and stir until most of the liquid is absorbed, 6-8 minutes longer.

8 medium beets
3 tablespoons unsalted butter
2 teaspoons sugar
1/2 cup freshly squeezed orange juice
2 tablespoons grated orange peel, blanched
6 fresh sage leaves, chopped
Coarse salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 375 degrees. Put the beets on a pan and roast them for about an hour or until they are tender when pierced with a fork or skewer. Cool them slightly and slip off their skins. Cut the beets into one-inch cubes.
  • Melt the butter with the sugar. Add the orange juice and cook until you have a light glaze (about five minutes). Add the orange peel and the sage leaves. Put the beets into a serving dish and toss them with the glaze. Season them to taste with salt and pepper and serve.

1 1/2 lbs about 13 small and medium beets, peeled, rinsed and cut into 2-inch chunks (*red or golden beets or in combination)
3 tablespoons olive oil
1/4 teaspoon salt
cracked black pepper
1/2 teaspoon anise seed (lightly crushed to release oil)
2 -3 small cinnamon sticks, broken in half
1/3 cup freshly squeezed orange juice (we used Valencia oranges)
2 tablespoons pomegranate molasses (my addition)
orange zest
fresh parsley, fresh cilantro (optional and my addition) or of fresh mint

Steps:

  • *Note: I used small spring beets which means they were not peeled. I also did not cut the beets into chunks but in half due to their size.
  • Preheat the oven to 375 degrees. Line a roasting pan with parchment paper.
  • Combine the beets, oil, salt, anise seeds, cinnamon stick pieces, orange juice and pomegranate molasses in the pan, tossing to coat the beets evenly.
  • Spread the beets in a single layer and roast for about 45 minutes, shaking the pan a few times to roast the beets evenly and roasting the beets until they are fork-tender.
  • Discard the cinnamon stick pieces.
  • Transfer to a serving platter and garnish with orange zest (and minced fresh herb of choice if using).
  • Serve warm.

8 whole fresh beets
1/4 cup sugar
2 teaspoons cornstarch
Dash pepper
1 cup orange juice
1 medium navel orange, halved and sliced, optional
1/2 teaspoon grated orange zest

Steps:

  • Place beets in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 25-30 minutes or until tender. Drain and cool slightly. Peel and slice; place in a serving bowl and keep warm., In a small saucepan, combine the sugar, cornstarch and pepper; stir in orange juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in orange slices if desired and zest. Pour over beets.

I recently made a duck recipe with a divine glaze, and was inspired to create this recipe. Beets are an under-appreciated vegetable. Roasting enhances their natural sweetness. This would be a nice accompaniment to roast chicken or pork.

2 lbs beets, try to pick similarly sized ones
2 tablespoons honey
1/4 cup port wine
1/3 cup orange juice
1/3 cup balsamic vinegar
1/2 teaspoon thyme
1 tablespoon Dijon mustard

Steps:

  • Line a roasting pan with aluminum foil. Place the scrubbed beets in the pan, cover with foil, and roast in a 400°F oven until they can be easily pierced, about 1 hour. (Or, you can wrap each beet in foil.).
  • While beets are roasting, mix together all remaining ingredients in a saucepan, bring to a boil, reduce heat and simmer for about 5 minutes. Set aside.
  • Peel and trim roasted beets. Grate on the large holes of a grater into a big bowl. Pour the warm dressing over the warm shredded beets - you may not need all the dressing.
  • Serve warm or at room temperature.
  • Note: I generally have around 1/3 cup dressing left. I add 1/2 teaspoons of minced garlic and use it to glaze pork chops or squash or sweet potatoes that I am roasting.

1 bunch beets (about 1 1/2 pounds), scrubbed, peeled, and cut into 1-inch pieces
1 teaspoon extra-virgin olive oil
Coarse salt and ground pepper
2 tablespoons red-wine vinegar
1 teaspoon honey
1/4 cup fresh orange juice
2 teaspoons finely grated orange zest
2 teaspoons fresh thyme leaves

Steps:

  • Preheat oven to 425 degrees. Place beets on a large piece of foil on a baking sheet. Drizzle with olive oil and season with salt and pepper. Fold foil around beets and crimp ends to form a packet. Roast until tender when pierced with a knife, about 45 minutes.
  • Transfer beets to a large bowl and drizzle with vinegar, honey, and orange juice. Top with orange zest and thyme.

2 pounds beets, peeled and cut into 1/2-inch slices (3 cups)
1/2 cup orange juice
1/4 cup cider vinegar
3 tablespoons honey
1 teaspoon salt
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Mix all ingredients except cornstarch and water in 3 1/2- to 4-quart slow cooker.
  • Cover and cook on low heat setting 11 to 12 hours or until beets are tender.
  • Mix cornstarch and water; stir into beets. Cook uncovered on high heat setting 5 to 10 minutes or until sauce has thickened.
