Steps:

  • Mix sauerkraut and dressing.
  • Spread 2 bread slices with sauerkraut mixture; fill with remaining ingredients to make 2 sandwiches.
  • Cook in skillet sprayed with cooking spray on medium heat 4 min. on each side or until golden brown on both sides.

This is your basic everyday eye round roast beef. Simply cooked to perfection. Serve it to family or company. The secret is in the time cooked. 20 minutes per pound at 375 degrees.

3 pounds beef eye of round roast
½ teaspoon kosher salt
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). If roast is untied, tie at 3 inch intervals with cotton twine. Place roast in pan, and season with salt, garlic powder, and pepper. Add more or less seasonings to taste.
  • Roast in oven for 60 minutes (20 minutes per pound). Remove from oven, cover loosely with foil, and let rest for 15 to 20 minutes.

8 slices bread, sourdough or 8 slices rye bread
1 (16 ounce) jar of prepared sweet and sour red cabbage
1/2 lb sliced roast beef
8 slices gouda cheese
Dijon mustard
butter

Steps:

  • On 4 slices of bread, place a slice of gouda cheese.
  • Drain juice from the sweet and sour red cabbage as needed and place a layer on top of the Gouda cheeese.
  • Add desired amount of roast beef - (approximately 2-3 slices) on top of the cabbage.
  • Top with another slice of Gouda cheese.
  • Place the other 4 slices of bread on top.
  • Butter top side of bread and place buttered side down in hot skillet.
  • Butter the other side and flip when nice and brown.
  • Cover the skillet while browning to melt and heat the entire sandwich.
  • Serve with Dijon mustard.

2 pieces pumpernickel rye bread
3 tablespoons Thousand Island dressing
2 slices Swiss cheese
4 slices pastrami
1/4 cup sauerkraut
2 tablespoons butter (salted or unsalted)
Potato chips, for serving

Steps:

  • Preheat a waffle maker on medium-low heat.
  • Spread each slice of bread with the Thousand Island dressing. Place a piece of cheese on top of each slice.
  • Add the pastrami and sauerkraut to one side. Close the sandwich and butter the top with 1 tablespoon butter.
  • Set the sandwich, butter-side down, in the waffle maker. Spread the remaining butter on top of the sandwich and close the waffle maker.
  • Toast until golden and crisp, 2 1/2 to 3 minutes.
  • Remove, slice in half and serve with potato chips.
