½ cup unsalted butter
2 tablespoons olive oil
4 cups sliced onions
4 (10.5 ounce) cans beef broth
2 tablespoons dry sherry
1 teaspoon dried thyme
1 pinch salt and pepper to taste
4 slices French bread
4 slices provolone cheese
2 slices Swiss cheese, diced
¼ cup grated Parmesan cheese

Steps:

  • Melt butter with olive oil in an 8 quart stock pot on medium heat. Add onions and continually stir until tender and translucent. Do not brown the onions.
  • Add beef broth, sherry and thyme. Season with salt and pepper, and simmer for 30 minutes.
  • Heat the oven broiler.
  • Ladle soup into oven safe serving bowls and place one slice of bread on top of each (bread may be broken into pieces if you prefer). Layer each slice of bread with a slice of provolone, 1/2 slice diced Swiss and 1 tablespoon Parmesan cheese. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.

6 large onions, chopped
1/2 cup butter
6 cans (10-1/2 ounces each) condensed beef broth, undiluted
1-1/2 teaspoons Worcestershire sauce
3 bay leaves
10 slices French bread, toasted
Shredded Parmesan and shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, saute onions in butter until crisp-tender. Transfer to a 5-qt. slow cooker. Add the broth, Worcestershire sauce and bay leaves., Cover and cook on low for 5-7 hours or until the onions are tender. Discard bay leaves., Ladle soup into ovenproof bowls. Top each with a slice of toast; sprinkle with desired amount of cheese. Place bowls on a baking sheet. Broil for 2-3 minutes or until cheese is lightly golden.

1/2 cup butter
6 (10 1/2 ounce) cans condensed beef broth, undiluted
1 1/2 teaspoons Worcestershire sauce
3 bay leaves
10 slices French bread, toasted
shredded parmesan cheese
shredded mozzarella cheese

Steps:

  • In a large skillet, sauté onions in butter until crisp-tender.
  • Transfer to an ungreased 5-quart slow cooker/crock pot.
  • Add the broth, Worcestershire sauce, and bay leaves.

4 tablespoons unsalted butter
4 medium onions
3 tablespoons Cognac
1/2 cup white wine
1 tablespoon all-purpose flour
7 cups low-sodium beef stock
1 tablespoon fresh thyme leaves
Salt and pepper
4 ounces thinly sliced Gruyere
8 slices of whole-grain rustic bread

Steps:

  • Melt butter in a heavy-bottomed Dutch oven over medium heat. Add onions, halved lengthwise and cut into 1/4-inch slices. Cook, stirring occasionally, until caramelized and very soft, about 45 minutes.
  • Deglaze pan with Cognac and wine, scraping up bits from bottom of pan with a wooden spoon.
  • Sprinkle flour over onions; stir. Add beef stock and thyme leaves andbring to a simmer. Cook, partially covered, until heated through, about 20 minutes. Season with salt and pepper to taste.

4-5 c vidalia (sweet) onions, chopped (about 3-4 jumbo size onions)
1 stick butter, unsalted
1-2 tsp garlic, minced (adjust to taste)
32 oz beef broth (can substitute for vegetable broth for vegetarian version)
2 Tbsp Worcestershire (omit if making vegetarian style)
1-1/2 c hot water
2 tsp concentrated beef bouillon (omit if making vegetarian)
3-4 Tbsp dry sherry (optional)
salt and pepper to taste
8 slice provolone cheese (or other white cheese, e.g., mozzarella, jarlsburg, swiss)
8 slice crusty bread, lightly toasted (we like pumpernickel or a baguette)

Steps:

  • 1. Heat crock pot to high temperature setting. Add butter, chopped onions and cover. Cook on high for 2 hours or until onions are translucent, stirring occasionally.
  • 2. Add garlic, beef broth, salt/pepper and Worcestershire. Allow to cook 2 more hours on high. Add hot water and concentrated beef bouillon. Turn heat setting to low for 1 to 2 hours. About 15 minutes before serving, add dry sherry (optional). Turn off heat.
  • 3. Lightly toast bread. Pour soup into serving dishes. Place toasted bread on top of soup, followed by sliced cheese. Set under oven broiler for a few minutes until cheese bubbles to your desire. Serve hot.
  • 4. NOTE: If you're planning to make the crock pot soup while away from the house and unable to stop at the 2 hour increment to add ingredients, first cook the onions in the butter (or butter/oil) using a stovetop pot or pan until translucent (about 6 to 8 minutes). Place cooked onions and all other ingredients except dry sherry into the crock pot. Cook on low-heat for 6 to 8 hours. Follow instructions for adding the dry sherry (optional), the toast and cheese as directed above at the end of cooking time.

This soup was first inspired by Mrs Weasley's onion soup that she serves to Harry upon his arrival at the Burrow soon after the end of his 5th year at Hogwarts. From that I looked at through my favourite old cookbook and adding some personal flare, created the best, thick, rich onion soup I have ever had.

2 lbs yellow onions
1/2 cup margarine
1 teaspoon garlic, minced
4 tablespoons beef bouillon
1 teaspoon Worcestershire sauce
salt, to taste
3 tablespoons all-purpose flour
1 tablespoon white sugar
2 cups beef broth
2 cups water
1 -2 sourdough bread
2 ounces monterey jack cheese
2 ounces cheddar cheese

Steps:

  • Chop onions into thin strips and add to melted margarine in a large pot. Add garlic and cook onions, stirring occasionally until softened.
  • Add some salt to onions.
  • Add Bovril and Worcestershire sauce and continue cooking onions over low heat for 30 minutes m minimum, stirring occasionally.
  • With a fork, blend flour and sugar together then add to onions, stirring the whole time.
  • Cook onions with flour and sugar for 2-3 minutes.
  • If using beef broth add with water and simmer soup partially covered for an additional 30 minutes minimum.
  • Add additional salt to taste.
  • Preheat oven to 400°F
  • Ladle soup into oven safe bowl. Float slice(s) of bread on the soup and layer cheese over top.
  • Bake on a cookie sheet until cheese melts and starts to brown.

1 tablespoon almond flour
3 cups beef bouillon
1 tablespoon Worcestershire sauce
1/16 teaspoon black pepper
1 ounce brandy
2 tablespoons Parmesan cheese grated
