ROASTED ASPARAGUS AND SCALLION SALAD



Roasted Asparagus and Scallion Salad image

In this hearty, many-textured salad, soft, roasted asparagus is tossed with chewy whole grains and crisp, sweet caramelized scallions. You can use freekeh or farro here for the grains. Both are whole-wheat kernels, but the freekeh has a slightly smoky note from being toasted, while the farro is nuttier-tasting. You can prepare the freekeh or farro ahead and let it marinate in the dressing for up to six hours, but it's best to roast the asparagus and scallions within an hour of serving. Don't use pecorino Romano here, it's too sharp. If you can't find a young pecorino, use a young manchego or even a nice Cheddar, and serve this as a light main course or a salad course to a more substantial meal.

Kosher salt, as needed
1/4 cup freekeh or farro
2 1/2 teaspoons soy sauce
2 teaspoons lime juice
1 small garlic clove, grated on a Microplane or minced
Fine sea salt and black pepper, to taste
3 tablespoons extra-virgin olive oil, more as needed
1 bunch asparagus (1 pound), woody ends trimmed
1 bunch scallions (about 5 ounces), halved lengthwise and crosswise to form 2-inch-long ribbons
3 ounces (3 cups) salad greens, such as baby arugula
Pecorino Rossellino or other young sheep's milk cheese, as needed (optional)

Steps:

  • Bring a small pot of heavily salted water to a boil, stir in freekeh or farro, cover, and simmer until al dente, 20 to 30 minutes.
  • Meanwhile, in a large bowl, whisk together 2 teaspoons soy sauce, lime juice, garlic, and pinch salt and pepper. Drizzle in 3 tablespoons oil, whisking constantly.
  • Drain freekeh and stir immediately into dressing while still warm.
  • Heat oven to 425 degrees. Spread asparagus and scallions over a rimmed baking sheet and drizzle liberally with oil, 1/2 teaspoon soy sauce and a pinch of salt and pepper. Toss to combine, then arrange in a single layer. Roast until they start to char in spots, about 20 minutes. Let cool slightly: The asparagus are best while still a little warm but not hot enough to wilt the greens.
  • Toss salad greens in the bowl with freekeh and dressing until leaves are coated, and transfer to serving platter. Top with roasted asparagus and scallions, shave cheese over salad if you like, and serve.

3 large garlic cloves, crushed
2 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce (such as Tabasco)
1/4 cup olive oil
1/2 cup grated Parmesan cheese (about 2 ounces)
1 pound asparagus
Purchased croutons

Steps:

  • Add first 5 ingredients to blender. With machine running, gradually add oil. Add 1/4 cup cheese. Season dressing to taste with pepper.
  • Bring pot of salted water to boil. Add asparagus and cook until just tender, about 3 minutes. Drain. Cool under cold water and drain. (Can be prepared 6 hours ahead. Cover dressing and asparagus separately.)
  • Arrange asparagus on platter. Drizzle with dressing. Sprinkle with croutons and remaining cheese.

Don't be afraid! It is SO good! My husband and I had never been big asparagus fans, but when I got this recipe from an awesome lady who often substitute teaches at the school where I work, I just had to try it, and we love it! I've never actually put the croutons on, and we never toss all four servings together as the recipe calls for, we just put the salad in individual bowls, top with the chicken and veggies, and put on the desired amount of dressing and parmesan cheese. I also love mine with fresh ground pepper. We like to precook a larger quantity of asparagus and chicken ahead of time to be able to enjoy this salad more than once. I've taken this to work for lunch as well, but would recommend keeping the ingredients separate in order to prevent the lettuce from getting mushy. This makes a great meal all by itself, maybe with some fresh fruit for dessert. The preparation time is really a guess. It all depends on whether or not you already have the chicken cooked and on what method you choose to cook it. All of the other ingredients can be prepped and ready in less than the amount of time it takes to cook the chicken, so it comes together pretty fast.

1 (12 ounce) bag romaine lettuce (My card just says one bag, 12-16 ounce is a guess. Depends on how you like the proportion)
2 1/2 cups cut-up cooked chicken breasts (we usually grill or broil it)
2 cups cherry tomatoes (halved if necessary) or 2 cups grape tomatoes (halved if necessary)
2 cups cut-up cooked asparagus (I steam just long enough to take off the raw edge, but remain a crunchy, then plunge into cold water)
1/2 cup caesar salad dressing (regular or reduced fat)
1 cup seasoned croutons
1/4 cup shredded parmesan cheese (The real stuff, not the powdered stuff that you shake out of a jar)

Steps:

  • Toss lettuce, chicken breast (warm or cold), tomatoes, and asparagus in a large salad bowl.
  • Add dressing and toss.
  • Top with croutons and parmesan cheese.
  • Serve immediately.

I was thumbing thru an old Summertime Southern Living magazine and found this recipe..I made it for dinner and we loved it...putting it here for safe keeping. Quick Tip: Start with hot water for faster boiling and cook fresh pasta and asparagus together in the same pot. This does not work for all pasta dishes, but works well here since cooking times are the same.

4 cups hot water
1 (9 ounce) packaged refrigerated cheese-filled tortellini, uncooked
1/2 lb fresh asparagus, cut into 2 inch pieces
1 head romaine lettuce, torn
1/4 cup shredded parmesan cheese
caesar flavored crouton
caesar salad dressing (homemade or your favorite brand)

Steps:

  • Bring water to a boil in a 4 quart dutch oven.
  • Add tortelllini and asparagus and cook for 4 minutes, drain; rinse in cold water, and drain. Set aside.
  • Place lettuce, tortellini, and asparagus in a large bowl; add dressing, tossing gently. Add parmesan and croutons. Serve.
