1 1/2 cups flour
3/4 cups brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 egg
1/2 cup buttermilk
1 teaspoon vanilla
1 cup chopped rhubarb
1/2 cup chopped walnuts
1/2 cup brown sugar
1/4 cup chopped walnuts
1/2 teaspoon cinnamon

Steps:

  • Preheat oven 325 degrees F.
  • Combine dry ingredients. Add wet ingredients, mixing only until moist. Fold in rhubarb and walnuts. Combine topping ingredients and sprinkle over muffins. Bake for 20 to 25 minutes.

1/2 cup brown sugar
2 tablespoons brown sugar
5 tablespoons melted butter
1 egg
3/4 cup diced rhubarb
1 teaspoon vanilla
1/2 cup buttermilk
1/2 cup walnuts, coarsely chopped
1-1/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup granulated sugar
3/4 teaspoon cinnamon

Steps:

  • Combine brown sugar, 1/4 cup melted butter, egg, vanilla and buttermilk in large bowl. Beat to blend. Stir in rhubarb and walnuts.
  • Combine flour, baking soda, baking powder and salt in separate bowl, Stir into rhubarb mixture just until dry ingredients are moistened. Spoon batter into greased muffin cups, filling about 2/3rds full. Set aside.
  • Combine remaining 1 tablespoon of melted butter, granulated sugar and cinnamon in a small bowl. Sprinkle mixture over tops of muffins and press lightly into batter with fingers. Bake at 400 degrees for about 20 minutes or until muffins spring back when touched lightly with finger. Makes 9-10 muffins.
