Reuben Casserole is a family favorite with layers of warm egg noodles, tangy sauerkraut, thousand island dressing, corned beef, gooey cheese, and buttery toasted rye bread. It's like a reuben sandwich made even better in one dish for easy clean up!

16 ounces sauerkraut ((drained with most of the liquid squeezed out))
6 ounces egg noodles (cooked to package instructions)
1 teaspoon salt
1/2 teaspoon black pepper
1 pound chopped corned beef
1 cup Thousand Island dressing
12 slices Swiss cheese
4 slices rye bread (torn into pieces)
2 tablespoons butter (melted)

Steps:

  • Preheat oven to 350°F.
  • Place sauerkraut and cooked noodles in the bottom of a 9"x13" baking dish. Stir to combine.
  • Season sauerkraut mixture with salt and pepper.
  • Layer corned beef over sauerkraut mixture. Spread evenly.
  • Spread Thousand Island evenly over corned beef layer.
  • Layer Swiss cheese over Thousand Island dressing.
  • Top with rye bread pieces.
  • Drizzle melted butter over bread.
  • Bake for 30 minutes.

5 cups uncooked egg noodles
2 cans (14 ounces each) sauerkraut, rinsed and well drained
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3/4 cup whole milk
1/2 cup chopped onion
3 tablespoons prepared mustard
3/4 pound sliced deli corned beef, chopped
2 cups shredded Swiss cheese
2 slices day-old light rye bread
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large bowl, combine the sauerkraut, soup, milk, onion and mustard. , Drain noodles; stir into sauerkraut mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with corned beef and cheese. , Place bread in a food processor; cover and process until mixture resembles coarse crumbs. Toss crumbs with butter; sprinkle over casserole. , Bake, uncovered, at 350° for 40-45 minutes or until bubbly.

6 slices rye bread, cubed
1 (16 ounce) can sauerkraut, drained and rinsed
1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
  • Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.
  • Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

Reuben lovers will definitely like this casserole. The first time I made this, I used deli-sliced corned beef, but I've found it works great with shredded leftovers from a brisket, too. I also prefer brown deli mustard over other varieties. Pair this casserole with a salad of mixed greens, and you've got one tasty meal!

8 ounces egg noodles, uncooked
8 ounces corned beef (see directions)
1 (16 ounce) bag sauerkraut, drained
2 teaspoons caraway seeds
8 ounces swiss cheese, shredded
1/2 cup thousand island dressing
1/2 cup milk
1 tablespoon mustard
2 slices pumpernickel bread
1 tablespoon butter

Steps:

  • Preheat the oven to 350F, and spray a 13x9-in. baking dish with non-stick cooking spray. Cook the noodles according to the directions on the package and drain.
  • If using deli corned beef, cut it into bite-sized pieces. If using leftover brisket, shred. Mix the corned beef, noodles, sauerkraut, caraway seeds, and Swiss cheese in a bowl and pour into the baking dish.
  • Mix the Thousand Island dressing, milk, and mustard in a bowl, then spread evenly over the noodle mixture.
  • Tear the bread into chunks. Run the bread through a food processor or blender until turned into crumbs. Mix the bread crumbs with the butter and sprinkle evenly over the casserole.

2 (10.75 ounce) cans condensed cream of mushroom soup
1 ⅓ cups milk
½ cup chopped onion
1 tablespoon prepared mustard
2 (16 ounce) cans sauerkraut, rinsed and squeezed dry
1 (8 ounce) package egg noodles
1 ½ pounds kielbasa (Polish) sausage, cut into 1/2 inch pieces
2 cups shredded Swiss cheese
¾ cup whole wheat bread crumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine the soup, milk, onion and mustard. Mix well and set aside.
  • Spread sauerkraut into the bottom of a lightly greased 9x13 inch baking dish. Top with uncooked noodles, then spoon soup mixture evenly over noodles. Cover all with sausage and top with cheese. 1 (16 ounce) package egg noodles
½ cup thousand island salad dressing, or to taste
½ cup mayonnaise, or to taste
1 pound thickly sliced deli-style corned beef, cut into 1-inch squares
12 ounces sauerkraut
6 ounces shredded Swiss cheese
6 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes; drain, reserving a few tablespoons of the water. Transfer noodles and reserved water to a large bowl.
  • Mix salad dressing and mayonnaise into the noodles about a tablespoon each at a time, stirring to coat the noodles, until the mixture has a creamy texture to your liking. Add corned beef, sauerkraut, Swiss cheese, and Cheddar cheese to the noodles; stir. Pour the mixture into a 13x9-inch baking dish.
