My husband, Chad, is always ready to try a new recipe, so I surprised him with this creamy chicken casserole sprinkled with crushed tortilla chips. He loves the flavor, and I like that it's the perfect size for our small family. -Kendra Schneider, Grifton, North Carolina

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
2 tablespoons taco sauce
1/4 cup chopped green chilies
3 cups cubed cooked chicken
12 slices process American cheese
4 cups crushed tortilla chips

Steps:

  • Preheat oven to 350°. In a large bowl, combine the soup, sour cream, taco sauce and chilies. In an ungreased shallow 2-qt. baking dish, layer half of the chicken, soup mixture, cheese and tortilla chips. Repeat layers. , Bake, uncovered, until bubbly, 25-30 minutes.

This is a recipe that has been a staple on our monthly menus for the past 10 years. It is delicious and easy!

5 boneless skinless chicken breasts, baked or boiled and cut into cubes
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup sour cream
1/4 cup picante sauce
2 cups monterey jack cheese
3 cups crushed corn chips, divided

Steps:

  • Combine chicken, soup, sour cream, and picante sauce, mixing well.
  • Spoon 1/2 mixture into lightly greased 2-quart round casserole dish.
  • Sprinkle 1/2 of cheese over first layer.
  • Add 1/2 of the crushed corn chips.
  • Repeat a second layer by adding the rest of the chicken mixture, cheese and then the rest of the chips.
  • Bake, uncovered at 350 degrees Fahrenheit for 20-25 minutes.

This recipe was passed to me by a friend. It is simple to make and taste wonderful. It is just as wonderful right out of the oven or as a leftover. My family all love it.

4 teaspoons butter
1 lb boneless skinless chicken breast (cut into small pieces)
1 cup chopped white onion
1 can cream of chicken soup
1 can chicken broth
1 can Rotel Tomatoes (your preference on hotness)
1 package corn chips (your preference)
4 cups shredded cheese (your preference)

Steps:

  • Melt butter over medium heat, add chicken and onions.
  • Cook chicken until it is just cooked through.
  • Set aside.
  • In bowl mix, add undiluted cream of chicken soup, broth, and rotel.
  • In oven casserole dish crush 1/2 bag of chips, layer on bottom of dish.
  • Layer half of chicken and onions over chips.
  • Pour half of soup mixture over chicken.
  • Layer 2 cups of shredded cheese over chicken.
  • Repeat last 4 steps.
  • Bake in 350 degree oven for 20 minutes.

2 tablespoons butter
1 medium onion, chopped (1/2 cup)
1 package (8.8 oz) microwavable rice
3 cups chopped cooked chicken
1 1/2 cups frozen baby sweet peas (from 12-oz bag)
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
1 cup mayonnaise
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (8 oz) sliced water chestnuts, drained
1 jar (4 oz) sliced pimientos, drained
3 cups coarsely crushed rippled potato chips

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 8-inch skillet, melt butter over medium heat. Cook onion in butter 5 minutes, stirring frequently, until tender.
  • Meanwhile, cook rice in microwave as directed on package.
  • In large bowl, gently toss onion, rice, chicken, peas, cheese, mayonnaise, soup, water chestnuts and pimientos. Spoon mixture into baking dish. Top with potato chips.
  • Bake uncovered 20 to 25 minutes or until bubbly.
