Ensalada de Repollo is a staple condiment in Nicaragua. It's commonly compared to a pickled Cabbage Slaw that is soaked in vinegar, limes, onions, carrots & tomatoes. Serve this with Gallo Pinto, Carne Asada or any typically Nicaraguan dish.

10 oz of shredded cabbage
1 cup of shredded carrots
1/2 cup of water
1/2 cup of white vinegar
1/3 cup of diced tomato
1/3 cup of diced white onions
1 lime squeezed
Salt and pepper to taste

Steps:

  • In a large bowl, add the cabbage, carrots, onions, and tomatoes.
  • Then top the ingredients with water, vinegar and lime juice. Toss well until ingredients are saturated.
  • Season to taste and store in an air-tight container. The longer it soaks, the stronger it taste.

1/2 head cabbage, shredded
1 carrot, peeled and grated
4 cups water, boiling
2 tomatoes, chopped
3 scallions, minced
1/2 cup white vinegar
1/2 cup water
1 jalapenos or 1 serrano chili pepper, minced
1/16 teaspoon salt

Steps:

  • Place the cabbage and carrots in a large heat-proof bowl. Pour the boiling water into the bowl to cover the cabbage and carrots and set aside for about 5 minutes. Drain in a colander, pressing out as much liquid as possible.
  • Return the cabbage to the bowl and toss with the remaining of the ingredients. Let set at room temperature for a couple hours if you like. Then chill and serve as an accompaniment to pupusas or as a side dish.

PICO DE GALLO WITH CABBAGE (MEXICAN COLESLAW)

It took a while to get this perfected so it tastes just like our favorite Mexican restaurant. This is a great change up to the ordinary chips and salsa. It goes great with chips or as a quesadilla topping. It's different from your typical Mexican fare, but it is fantastic. This is a pretty forgiving recipe and you can adjust ingredients to your liking. You can add more cilantro, onion or jalapeno depending on your tastes. You can eat this right away but it is best after you have given the flavors an hour or two to blend. For those that don't like it too hot, La Costena® brand makes a great pickled jalapeno that has lots of flavor and not too much heat.

5 Roma (plum) tomatoes, diced
¼ red onion, diced, or more to taste
¼ cup pickled jalapeno slices, diced and juice reserved

¼ teaspoon chili powder
¼ teaspoon ground black pepper

4 cup(s) cabbage, thinly sliced
1/4 cup(s) fresh lime juice
1 teaspoon(s) salt
2 cup(s) tomatoes, diced
1/2 cup(s) yellow onion, diced
1/2 cup(s) cilantro, chopped
1 large jalapeno pepper, diced
1 large ripe avocado, diced

Steps:

  • Place the sliced cabbage in a large bowl. Add lime juice and salt; toss to coat.
  • Add diced tomatoes, onion, cilantro, jalapenos and mix.
  • Gently fold in diced avocados. Serve immediately or refrigerate.
