Steps:
- Combine cream cheese, Eagle Brand milk, and lemon juice and beat until smooth.
- Stir in pineapple and pecans and fold in cool whip.
- Divide mixture evenly between both pie crusts.
- Chill in refrigerator for 4 hours before serving.

- Mix graham cracker crumbs, melted butter, and brown sugar in a bowl.
- Press crumb mixture into an 8-inch pie dish to form a crust.
- Whisk eggs and sweetened condensed milk together in large saucepan.
- Stir lemon juice and tequila into the egg mixture.
- Slowly bring egg mixture just to a boil over medium-low heat, stirring constantly until thickened, about 5 minutes. Remove from heat and cool slightly.

- In a nonreactive, stainless steel bowl, combine the cream or half-and-half and the eggs. Whisk until combined thoroughly. Add the salt and the nutmeg. Whisk to combine.

- In a large bowl combine limeade concentrate, sweetened condensed milk and lime zest together.
- Add in the dry pudding mix.
- Let sit on the counter for about 5 minutes.
- Fold in thawed Cool Whip until completely combined then mix in the food colouring.
- Pour into prepared pie crust.
- Cover the top of the pie with plastic wrap and chill for a minumum of 3 or more hours.
- Before serving dollup with Cool Whip or whipped cream and garlich with lime slices if desired.

- 1. Mix first 5 ingredients well. Easiest is to put pineapple in a large bowl, then sweetened condensed milk, then lemon juice, then fold in pecans and Cool Whip.
- 2. Pour into two graham cracker crusts and put in refrigerator to chill. Chill about 2 hours before serving.
- 3. Note that I put that it serves 16 - that is if they stop at one piece!! If you want larger slices, cut the pies into 6 pieces instead of 8 and then it serves 12.

- 1. Bake your premade crust. In a small bowl, combine the cornstarch and 1/3 cup cold water stir to dissolve lumps set aside.
- 2. In a medium saucepan combine chopped strawberries sugar and salt. Stir to combine and cook over medium heat until mixture comes to a gentle boil. Cook about 5 minutes until the berries create a little pool of sauce. Stir up the cornstarch and water mixture and add to the pan cook and stir often until the strawberry sauce boils again and thickens up about 4 or 5 minutes. Remove from heat and stir in the butter and vanilla. Set aside to cool to room temperatuare. Beat the heavy cream in a large bowl until very thick. Stir in gently the strawberry mixture and pile into the prepared cooled pie crust. Refrigerate 3 to 4 hours. This can be made with a graham cracker crust if you desire. If fresh strawberries are available I slice and serve the pie on top of them just to make it look pretty. Enjoy.
