1 (14 ounce) can Eagle Brand Condensed Milk
1/3 cup lemon juice
1 (8 ounce) carton Cool Whip
1 (15 ounce) can crushed pineapple, drained
1/2 cup pecans, chopped
2 graham cracker pie crusts

Steps:

  • Combine cream cheese, Eagle Brand milk, and lemon juice and beat until smooth.
  • Stir in pineapple and pecans and fold in cool whip.
  • Divide mixture evenly between both pie crusts.
  • Chill in refrigerator for 4 hours before serving.

Steps:

  • Mix graham cracker crumbs, melted butter, and brown sugar in a bowl.
  • Press crumb mixture into an 8-inch pie dish to form a crust.
  • Whisk eggs and sweetened condensed milk together in large saucepan.
  • Stir lemon juice and tequila into the egg mixture.

  • In a nonreactive, stainless steel bowl, combine the cream or half-and-half and the eggs. Whisk until combined thoroughly. Add the salt and the nutmeg. Whisk to combine.
  • Refrigerator Pie Rules: Heat oven to 350 degrees F. Evenly distribute the pie fillings in the pie crust. Do not overfill the crust with the filling ingredients. Do not pour too much royale into the crust. The eggs will expand upon cooking. Bake the pie until it is firm to the touch like set Jell-O, about 45 minutes. 1 (6 ounce) can frozen limeade concentrate
1 (14 ounce) can sweetened condensed milk
1 tablespoon grated lime zest
1 (3 1/2 ounce) package vanilla instant pudding mix
1 (8 ounce) container cool whip frozen whipped topping, thawed
3 -4 drops green food coloring
Cool Whip (use any amount desired) or whipped cream, for top (use any amount desired)
lime slice, halves (optional)

Steps:

  • In a large bowl combine limeade concentrate, sweetened condensed milk and lime zest together.
  • Add in the dry pudding mix.
  • Let sit on the counter for about 5 minutes.
  • Fold in thawed Cool Whip until completely combined then mix in the food colouring.
  • Pour into prepared pie crust.
  • Cover the top of the pie with plastic wrap and chill for a minumum of 3 or more hours.
  • Before serving dollup with Cool Whip or whipped cream and garlich with lime slices if desired.
  • *NOTE* for my Oreo cookie crust recipe --.
  • Process 14 regular size Oreo cookies in a processor until finely crushed (the cookies MUST be crushed fine).
  • Place the crumbs into a bowl and add in 1/4 cup melted butter or margaine mix well.
  • Pat into the pie plate; chill while making the rest of the recipe.
  • This amount is enough crumbs for a 9-inch pie crust.

1 can(s) sweetened condensed milk - can use fat free
1/3 c lemon juice
1 can(s) 20 oz crushed pineapple well drained
1 1/8 c chopped pecans
8 oz cool whip - soft - can use fat free
2 pkg prepared graham cracker pie crust - can use low fat

Steps:

  • 1. Mix first 5 ingredients well. Easiest is to put pineapple in a large bowl, then sweetened condensed milk, then lemon juice, then fold in pecans and Cool Whip.
  • 2. Pour into two graham cracker crusts and put in refrigerator to chill. Chill about 2 hours before serving.
  • 3. Note that I put that it serves 16 - that is if they stop at one piece!! If you want larger slices, cut the pies into 6 pieces instead of 8 and then it serves 12.

1-8 oz Cool Whip whipped topping
2/3 c pureed Kumquats
1 can sweetened condensed milk
1/2 c lemon juice

Steps:

  • Beat condensed milk and whipped topping. Add the lemon juice and beat until thickened. Add pureed kumquats, pour into shell and chill in refrigerator for several hours. To make puree: Wash the kumquats, cut in half and remove seeds. Place in a blender and puree. Do not cook. You can freeze the puree in Ziploc bags. Defrost the puree before using and drain the excess liquid. You can freeze the puree for six months.

ONE PRE-MADE PIE CRUST BAKED AND SET ASIDE TO COOL
1/3 c cornstarch
6 c coarsely chopped strawberries (fresh or frozen)
1 c sugar
1/8 tsp salt
2 tsp butter
1/2 tsp vanilla or almond extract
1 1/4 c heavy cream

Steps:

  • 1. Bake your premade crust. In a small bowl, combine the cornstarch and 1/3 cup cold water stir to dissolve lumps set aside.
  • 2. In a medium saucepan combine chopped strawberries sugar and salt. Stir to combine and cook over medium heat until mixture comes to a gentle boil. Cook about 5 minutes until the berries create a little pool of sauce. Stir up the cornstarch and water mixture and add to the pan cook and stir often until the strawberry sauce boils again and thickens up about 4 or 5 minutes. Remove from heat and stir in the butter and vanilla. Set aside to cool to room temperatuare. Beat the heavy cream in a large bowl until very thick. Stir in gently the strawberry mixture and pile into the prepared cooled pie crust. Refrigerate 3 to 4 hours. This can be made with a graham cracker crust if you desire. If fresh strawberries are available I slice and serve the pie on top of them just to make it look pretty. Enjoy.

8 large egg yolks (save the white for meringue)
1 1/2 c fresh squeezed lemon juice (meyer lemons are best)
3 can(s) eagle brand condensed milk (not evaporated milk)

Steps:

  • 1. Beat Eagle Brand milk with egg yolks. Beat one egg yolk at a time. Add lemon juice and beat until smooth and thick. Pour over graham cracker crust in a 9 x 13 inch pan. Make meringue and spread over pie. Bake at 350 degrees until brown. Cool and refrigerate. *Feel free to double up the recipe and use a deep dish rectangular Pyrex dish.
