1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1 can (14-1/2 ounces) stewed tomatoes, cut up
1/2 cup water
1 can (4 ounces) chopped green chiles
1/4 cup salsa
Tortilla chips

Steps:

  • In a large saucepan, combine the first 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until heated through, 8-10 minutes. Serve with tortilla chips.

¾ cup chopped onion
¾ cup chopped celery
1 (16 ounce) can refried beans
½ teaspoon dried oregano
¼ teaspoon chili powder
⅛ teaspoon garlic powder
1 (14.5 ounce) can Swanson® Chicken Broth
¼ cup prepared salsa, hot or mild
1 tablespoon chopped cilantro
½ cup Mexican cheese blend, shredded
4 ounces tortilla strips

Steps:

  • Place bacon in a large saucepan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Saute onion and celery in reserved bacon drippings over medium-high heat until tender, about 3 minutes. Stir in beans, crumbled bacon, oregano, chili powder, and garlic powder. When beans have softened, add Swanson® Chicken Broth and salsa. Bring to a boil; reduce heat and simmer covered until flavors have blended, about 15 minutes.
  • Garnish with cilantro and cheese. Serve with tortilla strips.

1 (16 ounce) can fat free spicy refried beans
1 (15 1/4 ounce) can whole kernel corn, drained or 1 (15 1/4 ounce) can Mexican-style corn
1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can chicken broth or 1 (14 1/2 ounce) can vegetable broth
1 (14 1/2 ounce) can stewed tomatoes, cut up or 1 (14 1/2 ounce) can diced tomatoes
1/2 cup water
1 (4 ounce) can diced green chilies (mild or hot)
1/4 cup salsa
ground cumin, to taste
shredded monterey jack cheese, to serve
chopped cilantro, to serve
tortilla chips, to serve

Steps:

  • In a large saucepan, combine everything up to the cumin.
  • Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until heated through.

1/2 cup chopped onion
1/2 teaspoon minced garlic
2 cans (16 ounces each) refried beans
1 can (14-1/2 ounces) chicken broth
1 tablespoon minced fresh cilantro
5 corn tortillas (6 inches), cut into 1/2-inch strips, optional
Sour cream and shredded Monterey Jack cheese, optional

Steps:

  • In a large saucepan, bring the tomatoes, onion and garlic to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in the refried beans, broth and cilantro; simmer for 15 minutes., Meanwhile, if tortilla strips are desired, place strips on a baking sheet. Bake at 350° for 12-15 minutes or until crisp. When I first made this I didn't think my kids would eat it. They LOVED it and I ended up having to make another batch. Try it with Tostitos Hint of Lime tortilla chips. My kids like to scoop the soup up with the chips! You can also make this very low fat, if you so choose.

4 bacon strips
3/4 cup chopped onion
3/4 cup chopped celery
1/8 teaspoon garlic powder
1 can (16 ounces) refried beans
1/4 cup picante sauce or salsa
1 can (14-1/2 ounces) chicken broth
1 tablespoon chopped fresh parsley
Hot pepper sauce, optional
Shredded cheddar cheese
Tortilla chips

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving drippings. Crumble bacon and set aside. In the drippings, saute the onion, celery and garlic powder until vegetables are tender., Add the beans, picante sauce, broth, parsley and bacon; bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until flavors are blended. Season to taste with pepper sauce if desired. Ladle into bowls and top with cheese. Serve with tortilla chips.

1 large onion, chopped
2 stalks celery, chopped or 2 teaspoons celery seeds
1 red bell pepper, chopped
2 tablespoons oil
1 lb ground beef
1 (28 ounce) can peeled tomatoes
1 (15 ounce) can refried beans
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon minced garlic
1 pinch cinnamon (optional)
1 pinch cayenne
2 cups beef stock
salt and pepper

Steps:

  • Roughly chop the onion, pepper, and celery.
  • Add the oil to a large stock pot and add the chopped vegetables, cooking until soft.
  • Add the beef and cook until browned.
  • Add the tomatoes and refried beans with the garlic, spices, and mix well.
  • Stir in the stock (you can use bouillon cubes and omit some of the water to make this as a dip) and bring to a boil.
  • Reduce heat and simmer for 30 minutes stirring occasionally.
  • Either use a stick blender or small batches into your food processor and puree the soup.
  • Adjust the seasonings (I like mine A LOT spicier so I add more cayenne and some green chilies to the mix, sometimes a dash or two of Tabasco.).
  • Serve with sour cream and tortilla chips.
  • Freezes Well.

Made it with what I had on hand and it tuned out to be one of the best Tortilla Soups my husband has ever had...well, ok, he may have been hungry...but still, he didn't have to say that. 1 32oz box chicken stock, low sodium
1 can(s) refried beans 16oz
I/2 c fresh or frozen corn kernels
1/4-1/2 c red onion or yellow
1/4 tsp cumin
1/4 - 1/2 tsp chipotle chili powder
1 can(s) rotel or other brand tomatoes & peppers
1 1/2 c shredded cooked chicken
1 medium avocado chopped
1 c semi crushed totilla chips
1/2 c cheese, shredded mexican style
sprig(s) cilantro, fresh chopped (opt)
small dollop of sour cream (opt)

Steps:

  • 1. Pour chicken stock in 2qt sauce pan and warm over medium heat. Add refried beans and mix with wire whip to bring beans to a liquid state with the stock.
  • 2. Add the rest of the ingredients up to the chicken...not the chicken, and let simmer for 10 minutes. Add chicken and heat til soup and chicken are hot.
  • 3. Serve in bowls and top with avocados, crushed tortilla chips, and cheese! I even forgot the cheese one night, and it was still tasty! Add the other goodies too, if you like!
  • 4. I didn't have black beans, so used refried and be darned...a good soup was born! But I bet it is good with black beans added too. Left over chicken or a purchased rotisserie chicken makes it really easy! We think it is great just like this. I didn't add extra salt since we are watching our salt intake, besides the chips are salted.
  • 5. This is a hardy soup for lunch or dinner...serve with salad and maybe tortillas! I've even made my own broth by putting chicken breasts, water, seasonings, Rotel and onion in the crock to cook low overnight. Next morn, strained the juice, mixed the refried beans in the juice, added the corn, shredded the chicken and retuned to the crock for more heating. Tasted and added spice as needed. Yes, easy and good!...IMO!

1 1/2 teaspoons smoked spanish paprika

salt and pepper, to taste

Steps:

  • Heat a large, non-stick pot and saute the onion until it begins to brown (adding a little water if needed to prevent sticking). Add the garlic and bell pepper and cook for one more minute. Add all the remaining ingredients and cook until the flavors blend, about 20-30 minutes. **This soup has a thick, chili consistency**.
  • Serving suggestion: Garnish with fresh tomato salsa, avocado, tortilla chips. Be creative!
  • Use the minimum amounts of chili powder and hot sauce for a mild dish or add more to make it as hot as you dare.

This is an award winning recipe from Taste of Home, Darlene Brenden of Salem, Oregon. I will post the recipe as listed, but I did make quite a few changes. I sauted a cup of red onion in oil and then added garlic after it was translucent. Then I used homemade refried black beans and refried pinto beans my friend made for me (i.e., with lard). I had frozen some homemade black beans and used those too instead of canned. I had homemade chicken broth in the freezer and used that in place of canned. I didn't use any water--only chicken broth. For the tomatoes, I used a combination of fresh and stewed (whatever I had). I didn't use green chilies, but I used around 7 ounces of jalapenos for more bite. I ended up adding another cup or so of corn for color and flavor (no, my corn wasn't garden fresh). Plus I added cayenne pepper, cumin, chili powder, and salt because I thought it needed more flavor. I also added a bunch of fresh cilantro at the end. If you don't want your food to talk back like I do, you'll probably enjoy the recipe exactly as posted. I must confess I almost threw in a bunch of frozen hash browns at the end, but I didn't because that would really tell you I live in Idaho. Maybe next time...it'll be hash brown and refried bean soup, the Idaho way.

1 medium green bell pepper, chopped (1 cup)

2 cups homemade vegetable stock or 2 cups chicken stock
14 1/2 ounces Mexican-style tomatoes or 14 1/2 ounces diced tomatoes seasoned with jalapenos
15 ounces black beans or 1 cup homemade black beans, defrosted if frozen
15 ounces red kidney beans or 1 cup homemade red kidney beans, defrosted if frozen
16 ounces fat-free refried beans
1/4 teaspoon ground cumin
black pepper

Steps:

  • Heat the oil in a 4 1/2-quart dutch oven or soup pot over medium heat. Peel and coarsely chop the onion, adding it to the pot as you chop. Seed and coarsely chop the bell pepper, adding it to the pot as you chop. Raise the heat to medium-high and cook until the vegetables are tender, 2-3 minutes.
  • Add the garlic to the pot. Stir in the broth and the tomatoes with their juice. Raise the heat to high. Rinse and drain the black beans and kidney beans and add them to the soup pot. Add the refried beans and the cumin and stir well. Cover the pot and let the soup come to a boil. Reduce the heat to low and simmer, stirring occasionally, until the soup is heated through and the flavors have blended, 5-7 minutes. Season with black pepper and serve.
