The Best Sweet Potato Potato Salad image

Number Of Ingredients 12

1/4 cup chopped cornichons or relish
2 tablespoons whole-grain mustard
1 tablespoon honey
2 ribs celery, diced
Zest and juice from 1 lemon
1/2 small red onion, minced
Kosher salt and freshly ground black pepper
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup white vinegar
1/2 cup mayonnaise
2 tablespoons minced fresh chives, plus more for garnish
2 tablespoons minced fresh parsley, plus more for garnish

Steps:

  • In a bowl, mix together the cornichons or relish, mustard, honey, celery, lemon zest and juice and red onion. Season with salt and pepper and let sit while the potatoes cook.
  • Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat. Reduce the heat to a simmer and cook until the potatoes are tender, about 10 minutes.
  • Drain the potatoes in a colander, put back in the saucepan, add the vinegar and, using a rubber spatula, toss gently to combine.
  • Add the mayonnaise, chives and parsley to the celery-onion mixture and stir to combine. Add the warm potatoes to the dressing and toss. Season to taste. Garnish with extra chives and parsley.

CARAMELIZED ONION SWEET POTATO SALAD



Caramelized Onion Sweet Potato Salad image

2 tablespoons olive oil
3 red onions, peeled, halved and thinly sliced
1 tablespoon Dijon mustard
1/4 cup balsamic vinegar
1 teaspoon honey
1 tablespoon finely chopped orange zest
1 tablespoon finely chopped fresh thyme
3 sweet potatoes, sliced into 1/2-thick slices
Vegetable oil
Salt and freshly ground pepper

Steps:

  • Heat oil in a heavy skillet over medium heat. Cook onions slowly until golden brown. Add mustard and vinegar and cook another 2 minutes. Remove from heat and add honey, orange zest and thyme, stir to combine. Let cool.
  • Preheat grill, Brush the potato slices on both sides with the vegetable oil and season with salt and pepper. Grill the potatoes on each side for 3 to 4 minutes or until just cooked through. Place potatoes in a bowl and fold in onion mixture.

This is a unique potato salad you can serve at a BBQ, or with Asian or Caribbean food. It looks beautiful, and has never failed to surprise anyone with its blend of flavors.

2 lbs sweet potatoes
3 tablespoons cilantro, finely chopped
1 lime, juice of
1 cup plain yogurt (I use Greek yogurt)
2 teaspoons honey or 1 tablespoon agave nectar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bell pepper, seeded and chopped
3 celery ribs, chopped
1/4 red onion, finely chopped
1 serrano pepper, seeded and chopped

Steps:

  • Preheat the oven to 400°F.
  • Wash and pierce the potatoes all over, and bake in the oven for 40 minutes, or until tender.
  • Mix the cilantro, lime juice, yogurt, honey/agave nectar, salt, and pepper in a small bowl. Chill.
  • When potatoes are done and cool enough to handle, peel them and cut into cubes.
  • In a large bowl, combine potatoes with bell pepper, celery, onion, and serrano pepper, then drizzle the chilled dressing on top. Mix well, chill, and then serve.
