3 tablespoons lime juice
1/2 teaspoon red chili flakes
1/2 teaspoon chili powder
6 tablespoons rice wine vinegar
1 teaspoon sugar
6 tablespoons extra-virgin olive oil
1 teaspoon salt
1 teaspoon pepper
1 1/2 cups peeled, julienned jicama
1 cup, peeled, julienned carrots
1 cup shredded napa cabbage
1/2 cup thinly sliced red onion
1 cup julienned English cucumber
1/2 cup julienned red bell pepper
1 tablespoon cilantro, chopped

Steps:

  • In a small mixing bowl add lime juice, chili flakes, rice wine vinegar, sugar, and extra-virgin olive oil. Season with salt and pepper and whisk to combine.
  • Combine the jicama, carrots, cabbage and onion, cucumber, red pepper and cilantro in large bowl and toss.
  • Add dressing to vegetables and let sit for 15 minutes, stirring 2 or 3 times. Serve.

My sister introduced us to this delicious salad, made with napa cabbage, ramen noodles, and a special dressing. Napa cabbage gives it a firm, crisp texture that is essential. Any flavor of ramen is good--I prefer the chicken or Oriental.

¼ cup sliced almonds
1 medium head napa cabbage, chopped into 1/2-inch pieces
1 (3 ounce) package ramen noodles, crushed, with seasoning packet
3 green onions, chopped
¼ cup mayonnaise
¼ cup sunflower seeds
¼ cup sesame seeds
½ cup white sugar
¼ cup apple cider vinegar
¼ cup olive oil
1 tablespoon soy sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toast sliced almonds on a baking sheet in the preheated oven until golden brown, 5 to 7 minutes. Let cool 10 minutes.
  • Mix toasted almonds, napa cabbage, ramen noodles with seasoning packet, green onions, mayonnaise, sunflower seeds, and sesame seeds together in a large bowl. Refrigerate if not serving immediately.
  • Mix sugar, apple cider vinegar, olive oil, and soy sauce together in a separate bowl to make dressing. Pour over the salad just before serving.

½ teaspoon kosher salt, or to taste

Steps:

1 small clove garlic, minced
Zest and juice of 1 lime
2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup hot chili oil
Salt
3 cups (1/2 small head) Napa cabbage, very thinly sliced
1/2 red, yellow, orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
1/3 cup peeled, very thinly sliced, 1/2-by-2-inch-pieces daikon (about 2 ounces)
1/4 cup trimmed, very thinly sliced snow peas (about 3 ounces)
1/4 bunch chives, snipped into 2-inch lengths
juice of 1 lime

Steps:

  • In a small bowl, whisk together the garlic, zest and juice of the lime, vinegar, soy sauce, and chili oil. Season with salt; set aside.

2 cups jicama, shredded (I use a veggie peeler to get thin curls)
1 apple, cored and chopped (I recommend using Granny Smith apples)
1 small shallot, finely chopped
1/4 cup dried cranberries
1/4 cup pecans or 1/4 cup walnuts, chopped
2 teaspoons olive oil or 2 teaspoons walnut oil
2 tablespoons apple cider vinegar
2 tablespoons honey
salt and pepper, to taste

Steps:

  • Combine the napa cabbage, jicama, shallot, dried cranberries and nuts.
  • In a small bowl, combine the oil, vinegar and honey. Pour over the salad and toss lightly.
  • Add salt and freshly ground black pepper.

3 to 4 cloves garlic, peeled, crushed and chopped (2 teaspoons)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon-style mustard
1 tablespoon red-wine vinegar
1 tablespoon soy sauce
3 tablespoons canola oil
1 firm head Napa cabbage (about 1 pound)

Steps:

  • Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
  • Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.

1 head napa cabbage
1 bunch minced green onions
⅓ cup butter
1 (3 ounce) package ramen noodles, broken
2 tablespoons sesame seeds
1 cup slivered almonds
¼ cup cider vinegar
¾ cup vegetable oil
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • Finely shred the head of cabbage; do not chop. Combine the green onions and cabbage in a large bowl, cover and refrigerate until ready to serve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Make the crunchies: Melt the butter in a pot. Mix the ramen noodles, sesame seeds and almonds into the pot with the melted butter. Spoon the mixture onto a baking sheet and bake the crunchies in the preheated 350 degrees F (175 degrees C) oven, turning often to make sure they do not burn. When they are browned remove them from the oven.
  • Make the dressing: In a small saucepan, heat vinegar, oil, sugar, and soy sauce. Bring the mixture to a boil, let boil for 1 minute. Remove the pan from heat and let cool.
  • Combine dressing, crunchies, and cabbage immediately before serving. Serve right away or the crunchies will get soggy.
