1 (9 ounce) can veggie burgers (we use Loma Linda Low Fat Redi- Burger)
16 slices rye bread
8 slices fat-free swiss cheese (thin slices)
1 medium sweet onion, sliced
2 tablespoons vegetable broth or 2 tablespoons water
butter or margarine

Steps:

  • Slice Redi-Burger into 8 equal patties. Spray non-stick skillet with cooking spray and fry Redi-Burger over medium heat until lightly browned on each side (approx. 3 minutes on each side). Remove patties from skillet and sauté sliced onion in skillet until lightly browned. Add vegetable broth cover skillet. Steam onions until tender.
  • Assemble sandwiches by placing 1 slice of Redi-Burger and 1 slice of cheese on slice of rye bread. Top with onions and another slice of rye bread. Lightly butter outside surfaces of bread and fry in skillet over medium heat until both sides of bread are toasted and cheese has melted. Serve immediately.

I am not a vegan, but I love the different variety of meatless soy burgers. This is a patty melt made with whatever flavor burger you want. Add mustard, ketchup, and a pickle for extra flavor.

1 large onion, cut in half vertically and sliced (about 2 cups)
1/2 cup water
1 (10 ounce) package frozen veggie burgers (or meatless soy protein burger)
8 slices reduced-calorie whole wheat bread
4 slices process American cheese or 4 slices cheddar cheese
butter-flavored cooking spray
salt and pepper

Steps:

  • Coat a large nonstick skillet with cooking spray, place over medium-high heat until hot. Add onion, saute 12 minutes or until very tender, adding water, 1 tablespoon at the time, to prevent scorching. Season with salt and black pepper to taste.
  • Remove onion from pan, keep warm.
  • Cook meatless burgers in pan according to package directions.
  • Divide cooked onion evenly over 4 slices of bread and top each with 1 burger patty and 1 cheese slice. Cover with remaining 4 slices of bread.
  • Place pan over medium heat until hot. Coat one side of each bread slices with cooking spray and place 2 sandwiches, coated side down, in pan, and cook about 3 minutes or until brown.
  • Coat top sides of sandwiches with cooking spray, turn sandwiches over, and cook for about 3 minutes or until brown.
  • Repeat procedure with remaining sandwiches.
  • If you own a indoor grill (such as George Forman) you can also make them, once assembled, on the grill and you dont' have to turn them over. Enjoy.

10 thin slices sweet onion
2 tablespoons butter, softened, divided
1/2 pound lean ground beef (90% lean)
1/4 teaspoon salt
1/4 teaspoon pepper
4 slices rye bread
2 tablespoons Thousand Island salad dressing
2 teaspoons prepared horseradish
2 slices process American cheese or Swiss cheese

Steps:

  • In a large nonstick skillet, saute onion in 1 tablespoon butter until tender. Remove and keep warm., Shape beef into two oval patties; sprinkle with salt and pepper. In the same skillet, cook patties over medium heat for 3-4 minutes on each side or until a thermometer reads 160° and meat juices run clear; drain.
