2 eggs
1 cup milk
1/2 cup water
1/2 teaspoon salt
3 Tablespoons butter, melted (plus more for cooking)
1 teaspoon sugar
1 teaspoon vanilla extract
1 cup flour
1½ Tablespoon cocoa powder
5 drops red food dye, optional
1 cup icing sugar
1/2 brick cream cheese (4oz)
2 Tablespoons milk
1/2 teaspoon lemon juice, optional

Steps:

  • Combine eggs, milk, water, salt, sugar, vanilla, and 3 Tablespoons melted butter in a blender and pulse until foamy, about 30 seconds.
  • Add flour and cocoa powder and pulse until smooth.
  • Add the food dye at this time, if using. You will need to make the batter a little brighter than you want your final product to be.
  • Refrigerate the batter for 30 minutes or overnight.
  • When ready to prepare your crepes, heat 1 Tablespoon of butter in a crepe pan or other shallow frying pan. Ensure that the butter has coated the entire surface of the pan before adding 1/4 cup of crepe batter and swirling to cover the surface of the pan.
  • Cook crepes one minute, flip carefully, and then cook other side for half a minute. (The edges will start to crisp and turn up slightly, but the surface won't get as bubbly as pancakes.)
  • Repeat this process with remaining batter.
  • To make the cream cheese filling, whisk the cream cheese filling ingredients (powdered icing sugar, cream cheese, milk and lemon juice) together, adding more or less milk to preference.
  • Spoon the filling into a piping bag and pipe a straight line across each crepe before rolling.
  • Garnish with chocolate sauce and leftover cream cheese filling.

1/2 cup sugar
1/2 cup sour cream
4 teaspoons all-purpose flour
1-1/2 teaspoons vanilla extract

CAKE:
1-1/2 cups sugar
1-1/2 cups canola oil
1 cup buttermilk
2 large eggs
1 bottle (1 ounce) red food coloring
2 teaspoons cider vinegar
1 teaspoon vanilla extract
2-1/2 cups cake flour
2 tablespoons baking cocoa
1-1/2 teaspoons baking soda
1 teaspoon salt
FROSTING:
3 packages (8 ounces each) cream cheese, softened
1-1/2 cups butter, softened
1 tablespoon vanilla extract
3 to 3-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 325°. Line bottom of a 9-in. springform pan with parchment; grease paper., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream, flour and vanilla. Add eggs; beat on low speed just until blended. Pour into prepared pan. Place on a baking sheet., Bake until center is set, 40-50 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate until ready to assemble, covering when completely cooled. , For cake, increase oven setting to 350°. Crepes:
2 eggs
1 1/4 cup milk
1 tsp sugar
dash of vanilla
3/4 cup flour
1 1/2 Tbsp cocoa powder
1 tsp red food coloring
butter (to place in the pan when cooking the crepes)
Cream Cheese Mousse:
1 1/2 cup whipping cream
1/2 cup milk (I use skim)
2 Tbsp. powdered sugar
1 (3.5 oz) package instant cheesecake pudding
Easy Raspberry Sauce:
1/2 cup water
1/2 cup sugar (you can add a little more at the end if the sauce is too tart)
1 Tbsp. cornstarch
1 tsp. lemon juice
2 cups frozen raspberries
For serving: powdered sugar and sweetened whipped cream, if desired

Steps:

  • For crepes: In a blender, beat eggs until light. Add milk, sugar, vanilla, flour, cocoa powder and food coloring. Blend until smooth. Let batter rest for 10 minutes.
  • Heat small (about 8 inch) Teflon skillet or crepe pan on medium and add a dab of butter to the pan. Pour in 1/8 cup batter. Lift the pan and tilt it back and forth until batter spreads evenly in a circle. When batter looks dull and dry, with a quick flip of the wrist, flip crepe over with a spatula and cook about 30 seconds or until light brown in areas. (I use a silicone spatula to do this).
  • Place a piece of waxed paper in between each crepe as you cook them. Once crepes are all cooked, cover with plastic wrap and refrigerate. These can be made ahead of time and can even be placed in the freezer and used at a future date. Makes 15 crepes.
  • To make the cheesecake mousse: in a large bowl, whip together the milk, whipping cream, and powdered sugar until soft peaks form. (I did this in my kitchen aid)
  • Then beat in the package of cheesecake pudding until combined and firm peaks form. Refrigerate for 1 hour or until ready to serve.
  • For the raspberry sauce: In a sauce pan, whisk together the water, sugar, cornstarch, and lemon juice. Whisk until cornstarch is blended in and there are no lumps.
  • Cook over medium heat until the mixture begins to boil. Add the raspberries and cook for about 1 minute until the mixture thickens. Allow to cool before using.
  • To serve crepes: place a spoonful of raspberry sauce down the center of each crepe. Then spoon or pipe the mousse down the center of each crepe. Fold over sides. Dust crepes with powdered sugar and top with a spoonful of sweetened whipped cream if desired.

2 tablespoons unsweetened cocoa powder
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 cups whole milk
2 eggs
1 tablespoon butter, melted
1 teaspoon vanilla extract
red gel food coloring
nonstick cooking spray
16 ounces cream cheese, softened
1 cup powdered sugar
4 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup mini chocolate chip
confectioners' sugar
chocolate syrup
whipped cream

Steps:

  • Add all the ingredients for the crepes, except the food coloring and nonstick spray, to a blender and blend until combined and smooth.
  • Add about 3/4 teaspoon of red gel food coloring and blend until combined.
  • Transfer the mixture to a glass bowl, cover with plastic wrap, and refrigerate for 30 minutes.
  • Meanwhile, add the cream cheese, butter, powdered sugar, vanilla and salt to a food a bowl and mix with a spatula until smooth and combined. Fold in the chocolate chips.
  • Transfer the mixture to a pastry bag and set aside on the counter so it remains room temperature.
  • Uncover the crepe batter and give it a quick whisk.
  • Heat an 8-inch nonstick skillet over medium heat and spray with nonstick spray.
  • Scoop 1/4 cup of batter into the center of the skillet and immediately tilt and swirl pan to coat the bottom of the skillet.
  • Cook for 2 minutes until the edges have dried and lifted slightly from the sides and the center is set. Flip over and cook for another 30-60 seconds. Repeat with remaining batter. You should end up with 12 crepes.
  • Pipe a thick layer of the cheesecake filling on the bottom half of a crepe. Spread with an offset spatula if needed.
  • Fold the top half of the crepe over to cover the cheesecake filling. Fold in half so that you get a neat triangle. Repeat with remaining crepes.
  • Serve with a dust of confectioners' sugar, a drizzle of chocolate syrup, a dollop of whipped cream and some berries on the side.

One 8-ounce package cream cheese, at room temperature
1/3 cup granulated sugar
2 tablespoons sour cream
1 teaspoon pure vanilla extract
1 2/3 cups all-purpose flour, scooped and leveled (see Cook's Note)
1/4 cup unsweetened cocoa powder, scooped and leveled
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1 1/4 cups granulated sugar
1/2 stick (4 tablespoons) unsalted butter, melted
1 tablespoon buttermilk
1 teaspoon red food coloring
1 teaspoon pure vanilla extract
2 large eggs
Confectioners' sugar, for coating

Steps:

  • Make the filling: Line a baking sheet with parchment paper. Beat the cream cheese, granulated sugar, sour cream and vanilla in a large bowl with an electric mixer on medium speed until smooth. Spoon 1 tablespoon of the filling at a time onto the parchment so that you have 12 dollops. Freeze until solid, about 2 hours.
  • Make the cookies: Sift together the flour, cocoa powder, baking powder, salt and baking soda in a medium bowl. Whisk together the granulated sugar, butter, buttermilk, food coloring, vanilla and eggs in another bowl. Fold the flour mixture into the sugar mixture with a rubber spatula until smooth. Cover the bowl with plastic wrap and refrigerate until chilled, about 30 minutes (it will still be soft).
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • Coat your hands generously with confectioners' sugar and scoop a heaping tablespoon of the cookie dough into your hand. Put one of the frozen cream cheese dollops in the middle of the dough and place another tablespoon of the dough on top of the cream cheese. Shape the dough around it to completely enclose the cream cheese, and then roll to coat in the confectioners' sugar. Repeat with the remaining dough and cream cheese, coating your hands in confectioners' sugar as needed.
  • Place the cookies on the prepared baking sheets about 2 inches apart. Bake until the cookies are firm around the edges and can be easily lifted with a spatula, 10 to 12 minutes. Let the cookies cool on the trays for 10 minutes, and then transfer to a cooling rack and cool completely.
