STEAK AND BARLEY SOUP image

3# 95% lean ground beef
4 Tubs Knorr beef stock concentrate
3 3/4 T beef base
6 Qt water
1 1/2 # carrots sliced
1/2 bunch celery sliced
2 med.white onion chopped
2 1/2 T Kitchen Bouquet
1/2 tsp black pepper
2 C frozen mixed vegetables
4 cloves garlic chopped
3 14 oz can diced tomatoes
2 C barley
3 bay leaves
1 tsp crushed red pepper
shredded parmensan

Steps:

  • Combine water, Knorr stock and beef base and bring to a boil. Add barley and bring back to a boil. Lower heat and simmer for 20 minutes. Add red pepper, garlic and onion and simmer for 20 minutes. Add bay leaves, celery and carrots and simmer for 10 minutes Add browned beef, tomatoes, Kitchen Bouquet, frozen vegetables and black pepper. Simmer 10 minutes or until frozen vegetables are done. Serve and garnish with shredded Parmesan cheese.
