½ cup brown sugar
½ cup low sodium soy sauce
1-2 teaspoon minced garlic
3/4 cup low sodium chicken broth
1 ½ cups uncooked instant white rice
1/2 cup diced red onion
1 red bell pepper chopped
1 20 ounce can pineapple tidbits in juice, NOT drained
1 lb. thin-sliced boneless skinless chicken breasts or chicken tenderloins, diced into bite-sized pieces
Optional garnish: chopped cilantro and diced cooked bacon

Steps:

  • Preheat oven to 425 degrees F. Spray a baking dish with cooking spray. I used an 11 x 7-inch dish.
  • In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
  • Add uncooked rice, onion, bell pepper, pineapple and it's juices and chicken. Cover the baking dish tightly with foil. Bake for 50 minutes. Once cooking is done, uncover and stir ingredients.
  • Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until chicken is cooked through and rice is tender.
  • Let stand 5 minutes before serving. Top with diced bacon and cilantro.

¼ cup reduced-salt soy sauce
2 tablespoons white wine vinegar
2 tablespoons mirin (sweetened Asian wine)
1 teaspoon grated ginger root
2 crushed garlic cloves
1 tablespoon cornstarch
2 tablespoons oil, preferably sesame oil
1 pound boneless, skinless chicken breast, cut in 1-inch pieces
6 large green onions, cut in 1-inch pieces
2 cups fresh or frozen pepper strips
1 (20 ounce) can chunk pineapple in juice
¼ cup sliced almonds

Steps:

  • Combine first six ingredients; stir well.
  • Heat oil in a large skillet and stir-fry chicken until brown and done, about 5 minutes. Remove. Add green onions, peppers and pineapple to the skillet; heat through. Pour in sauce and stir until thickened. Return chicken to skillet; heat through. Serve with brown rice; top with optional almonds.

I came up with this recipe years ago by combining a couple of family favorites. Easy and versatile, it's great for potlucks. 4 cups unsweetened pineapple juice
2-1/2 cups sugar
2 cups white vinegar
1-1/2 cups water
1 cup packed brown sugar
2/3 cup cornstarch
1/2 cup ketchup
6 tablespoons reduced-sodium soy sauce
2 teaspoon chicken bouillon granules
3/4 teaspoon ground ginger
2 broiler/fryer chickens (3 to 3-1/2 pounds each), cut up
3 tablespoons canola oil
1 can (8 ounces) pineapple chunks, drained
1 medium green pepper, julienned

Steps:

  • Preheat oven to 350°. In a large saucepan, combine first 10 ingredients; stir until smooth. Bring to a boil; cook and stir 2 minutes or until thickened. Set aside. In a large skillet over medium-high heat, brown chicken in oil on all sides. , Place chicken in two greased 13x9-in. baking dishes. Pour sauce over chicken. Bake, uncovered, 45 minutes or until chicken juices run clear. Add pineapple and green pepper; bake 15 minutes or until heated through.

My original recipe with some of these ingredients was for a sandwich; this time I wanted to make it the main dish so served it over rice. Hubby isn't a rice person but he did eat this...it was supper, so take it or not! It's really quick and easy, hope you will give it a shot & that it becomes one of your go-to meals!

1/2 stick butter
1/2 green bell pepper, diced
1/2 sweet red pepper, diced
1/2 yellow bell pepper, diced
3 Tbsp diced celery
1 small shallot, minced
2 Tbsp brown sugar
1 tsp mrs. dash original seasoning
1/2 can(s) chunk pineapple (20 oz. can), reserve juice
3 Tbsp pineapple liquid (from can)
1 can(s) chunk white meat chicken, 12.5 oz., drained
1/4 tsp fresh cracked black pepper
2 c long grain rice, cooked

Steps:

  • 1. In large skillet, melt butter. Add in minced shallot and diced peppers; cook over medium heat until peppers are starting to get a little soft.
  • 2. Add in the brown sugar and pineapple juice, stirring to dissolve and vegetables are a little glazed. Stir occasionally.
  • 3. Add pineapple chunks and drained chicken. Turn heat up on high, and use a spatula to stir gently so you don't break chicken up too much. The mixture will thicken slightly; when it does, it's ready.
  • 4. Spoon over hot cooked rice on plate and serve. Enjoy!

An easy but tasty recipe! Doesn't need exact proportions, add list of ingredients as you desire or according to what you have available.

1 red pepper (green works as well, I just prefer red)
1 (12 ounce) can pineapple (I like a lot of pineapple so I use a large can)
1 lb chicken (cut into bite size pieces)
chicken (cut into bite size pieces)
1 (8 ounce) packet stir fry seasoning
red pepper seasoning
diced onion, amount according to preference
peanuts (I use whatever I have, normal or honey roasted)
at least a cup rice
1 -2 tablespoon oil (to fry chicken pieces)
other stir fry vegetables that you think would be good ie carrot, celery, corn, sugar snap peas

Steps:

  • Stir Fry up the chicken pieces in the oil in a large skillet.
  • Start the rice (follow whatever the box/bag says).
  • When the chicken is cooked through add the vegetables and the stir fry seasoning. Continue to fry.
  • Add pineapple and peanuts to taste.
  • Continue to fry.
  • Add red pepper seasoning.
  • The longer this is all stir fried together the better the flavor gets into everything.
  • Dish yourself some rice and put what you cooked up on top of it. I like to use a lot of rice so that I get lots of left overs. I hope you love this as much as I do!
