- To make the garlic bread: Preheat the oven to 400 degrees F.
- Drizzle the oil over the bread slices. Arrange the bread on a baking sheet. Sprinkle with salt and pepper. Bake until the bread is crisp and golden, about 5 minutes. Immediately rub the garlic cloves over the hot toasts.
- To make the aioli: Finely chop the garlic in the food processor. Add the peppers and blend until almost smooth. Blend in the mayonnaise. With the machine running, blend in the oil. Season the aioli, to taste, with salt and pepper. Transfer the aioli to a small bowl. (The aioli can be made 2 days ahead. Cover and refrigerate.)
- Spread the aioli over the toasts and serve.

- Whisk juice of 1 lime, 2 tablespoons red pepper oil, blue cheese dressing, mayonnaise, sour cream, 1 teaspoon cayenne pepper, and 1/2 teaspoon dill in a bowl until combined. Cover and place aioli sauce in freezer until ready to serve.
- Place coleslaw mix in a medium bowl. Add juice of 1 lime, 1/2 cup red pepper oil, onion, and chopped roasted red pepper. Toss together until slaw is thoroughly mixed.
- Heat 1 1/2 tablespoon vegetable oil in a skillet over high heat. Add garlic; cook until slightly browned, about 1 minute. Add tilapia; saute until starting to brown, about 2 minutes. Add juice of 1 lime, sour cream, cayenne pepper, Cajun seasoning, and dill. Cook and stir until tilapia is browned, about 4 minutes more. Reduce heat to low.
- Heat the remaining vegetable oil in a smaller skillet over medium heat. Add tortillas 1 at a time. Cook until bubbles form and tortillas are lightly browned, about 1 minute per side.
- Place a portion of the tilapia on each tortilla. Top with coleslaw mixture and chilled aioli sauce.

CAJUN SHRIMP CORNBREAD MINI-MUFFINS WITH ROASTED RED PEPPER AIOLI

- Preheat oven to 400 F. Prepare cornbread mix according to directions on the package. Blend the cheese with the cornbread mix. In a separate bowl toss the shrimp with the Cajun seasoning. Grease a 24-count mini muffin pan with cooking spray. Fill the cups about three-quarters full, using half of the batter. Add one shrimp to each of the cups on top of the cornbread batter. Bake until a toothpick inserted into center of the muffins comes out clean, about 12 minutes. Transfer pan to a wire rack, and let muffins cool for 5 minutes. Turn muffins out of the pan onto a cooling rack. Repeat with remaining batter. While cornbread is cooking prepare the aioli. Roast red peppers on a preheated grill over high direct heat until the peppers look charred and skin is blistered on all sides. Remove peppers from the grill and immediately place in a bowl and cover with plastic wrap. Sweat the peppers for 15 minutes. Then remove the plastic wrap from the bowl, rub skin off of the peppers and remove stems and seeds. Place peppers in a blender or food processor with mayonnaise, lemon juice, kosher salt and Sriracha. Blend until smooth. Serve the roasted red pepper aioli on top or on the side of the Cornbread Min-Muffins.
STEAMED MUSSELS WITH COCONUT-GREEN CHILE BROTH AND BLACK PEPPER FRENCH FRIES WITH SMOKED RED PEPPER AIOLI

- For the mussels: Heat the oil in a large saucepan over medium heat. Add the onions and cook until soft. Add the garlic and cook for 30 seconds until fragrant. Add the poblano puree and clam broth and cook until reduced by half, stirring occasionally. Add the coconut milk and honey and cook until reduced by half. Transfer the mixture to a blender (rinse out the pan) add the spinach, salt and pepper, to taste, and blend until smooth. Place the pan back on the stove over high heat. Add the wine to the pot, bring to a boil and reduce by half. Add the green chile broth and bring to a boil. Stir in the mussels, cover the pot and cook until the mussels open, discarding any that do not, about 4 to 5 minutes. Add the butter and parsley and season with salt and pepper, to taste. Spoon into bowls, garnish with more parsley, if desired, and serve with bread on the side.
- For the French Fries: Cut the potatoes into 1/4-inch thick slices then cut each slice into 1/4-inc thick fries. Place the fries in a large bowl of cold water. Heat the oil in a large, straight-sided skillet to 325 degrees F. Drain fries in batches on paper towels. Fry each batch for 3 to 4 minutes until a pale blonde color and remove to a sheet pan lined with paper towels. Increase the heat of the oil to 375 degrees F and fry the potatoes again, in batches, until golden brown. Remove to a sheet pan lined with paper towels and season liberally with salt and freshly ground black pepper.
- For the Aioli: Combine the mayonnaise, pepper, chipotle, salt and pepper in a food processor and process until smooth. Cover and refrigerate for at least 30 minutes before serving. Serve the fries with the aioli alongside the mussels.

GRILLED PORTABELLA SANDWICH WITH GOUDA AND RED PEPPER AIOLI
We serve this at Micheal's Cafe in Duncannon, PA. It's an original creation by our late, great executive chef and name sake, Mike. It's by far my favorite item on the menu. I eat it nearly every day that I work. My recipe is my cheap-o take on his recipe. Their's is MUCH better. The red pepper aioli can be made and held in the refrigerator for a little while and it's really great on anything. I use the store bought pesto (Classico, in a jar near the pasta sauces) since I've never attempted to make it myself. I hope you all enjoy it as much as I do!!

- Spray skillet and inside of buns with non-stick cooking spray. Grill in pan/skillet until lightly toasted.
- Heat olive oil in skillet. Grill mushroom until browned (about 5 minutes each side).
- Spread Red Pepper Aioli on bottom of bun.
- Put Portobello on top.
- Put Gouda Cheese on top of that.
- Put Bean Sprouts on top of that.
- Spread Basil Pesto on top of bun.
- You can also use panini bread and make these into paninis (like we do at the restaurant) if you have a panini press (which I'm too poor to buy).
- RED PEPPER AIOLI SAUCE.
- 3 garlic cloves, peeled and finely missed.
- 1/2 Cup fat-free mayo.
- 1/2 tsp salt.
- 1/4 tsp crushed red pepper.
- 1 large red pepper, diced and cooked well.
- Mix all ingredients in a food processor or extremely well in bowl until combined. Enjoy!

WAGYU BEEF-WRAPPED ASPARAGUS WITH ROASTED RED PEPPER AIOLI

- PREPARING THE ROASTED RED BELL PEPPER: Roast the large red bell pepper over a gas burner, BBQ, or gas grill until charred (black). Once charred on all sides, place the pepper in a small bowl and cover with plastic wrap. Let it sit for 30 minutes. Then, wipe off the pepper's charred skin until you see only the red bell pepper. Remove the seeds, and split it in half. NOTE: Half of the pepper will be cut into 12 strips for grilling with the asparagus and beef. The other half of the pepper will be diced and used for making aioli.
- PREPARING THE AIOLI: Place the egg yolks and Dijon mustard in a blender, and blend for 1 minute. With the blender running, add in half of the grapeseed oil and olive oil in a very slow and steady stream. Once half of the oil is added, add in the lemon juice. Then, continue slowly pouring in the oil. Once all of the oil is in the blender, add in the diced and roasted red bell pepper, minced garlic, kosher salt, and hot sauce. Blend until smooth, and season to taste with kosher salt. Refrigerate until ready to serve.
- PREPARING THE ASPARAGUS AND FULLBLOOD WAGYU BEEF: Trim about 2 inches from the woody ends of the asparagus, and discard the ends. Toss the asparagus with the grapeseed oil and kosher salt. Heat a gas grill over medium-high heat for 10 minutes. Grill the asparagus spears for 1 minute to soften and enhance the flavor. Let the asparagus cool. Then, lay the Fullblood Wagyu beef sukiyaki strips on a flat surface. Place one asparagus spear across each strip of Wagyu beef, essentially forming a cross. Then, add one strip of roasted red bell pepper right next to the asparagus spear. Carefully wrap the beef strip around the asparagus spear and pepper strip (working from top to bottom). Place the beef-wrapped asparagus spears on a baking sheet seam-side-down, so they don't unravel. If you have some that wont stay put, use a toothpick to pin the beef to the asparagus spear and pepper strip. Continue these steps until all of the asparagus spears are wrapped in Wagyu beef.
- FINAL STEPS: Carefully place the beef-wrapped asparagus spears on the grill seam-side-down. Grill for 45 seconds. Then using a large grill spatula, carefully turn them over. Grill on the other side for 1 minute or to desired doneness. NOTE: This dish can also be prepared in an oven. Set your oven to 400°F, and roast the beef-wrapped asparagus for 5-7 minutes (until slightly browned and no longer pink). Place the grilled Wagyu beef-wrapped asparagus on a large platter. Serve hot with the roasted red pepper aioli, and enjoy!
STEAMED MUSSELS WITH SPICY RED PEPPER AIOLI
Steps:
- To make the aioli: Place the red pepper on an open flame or grill. Turn to blacken on all sides. When fully charred, remove to a bowl and cover with plastic wrap. Let pepper cool, until you can handle it comfortably. Using your fingers, remove blackened skin to reveal the red color underneath. (A paper towel will wipe off what you can't remove with your fingers.) Coarsely chop the pepper and place it in the bowl of a food processor. Add the yolks, garlic, vinegar, chili paste, and salt to taste. Puree until the mixture is homogeneous. While the machine is running VERY slowly drizzle in the oil, until incorporated. Check the aioli for texture and flavor. If it's too thick, add a few drops of water to thin it down, or on the flip side if it's too thin add more oil. The desired outcome is a fairly thin aioli. Check the flavor and add more salt or chili paste, if desired. Refrigerate until ready to use.
- To cook the mussels: In a pot, large enough to accommodate all the mussels, generously coat with olive oil. Add the onions and bring to a medium-high heat, stirring frequently. Cook the onions until they are very soft and aromatic but have no color. Add the garlic, thyme and bay leaf and cook for another 2 to3 minutes. Stir to be sure the garlic doesn't burn. Add the mussels and stir to coat with the oil. Add the wine and cover the pot. Steam the mussels for 5 to 6 minutes or until all the shells open. If some shells don't open, cook them for a little longer. Sometimes the freshest mussels are the most stubborn to open. Remove the mussels that don't open after longer cooking. When in doubt, throw out.
- While the mussels are steaming, grill or toast the slices of bread.
- Serve the mussels in individual bowls with lots of the juice from the bottom of the pot. Generously drizzle each bowl with the aioli. Garnish with toast. (You may want to have more toasted bread on hand to sop up the delicious liquid!)

SHRIMP CORNBREAD MINI-MUFFINS & RED PEPPER AIOLI

- Preheat oven to 400 F. Prepare cornbread mix according to directions on the package. Blend the cheese with the cornbread mix. Peel clean and dice the shrimp. Then, in a separate bowl toss the shrimp with the Cajun seasoning. Saute onion in butter until tender. Add garlic, shrimp, and seasonings. Cook over low heat for 15 minutes. Add green onions. Cook for five minutes. Prepare cornbread mix according to the directions on the package. Add shrimp mixture, stir well. Bake at 350°F for ten minutes. Grease a 24-count mini muffin pan with cooking spray. Fill the cups about three-quarters full, using half of the batter. While cornbread is cooking prepare the aioli. Roast red peppers on a preheated grill over high direct heat until the peppers look charred and skin is blistered on all sides. Remove peppers from the grill and immediately place in a bowl and cover with plastic wrap. Sweat the peppers for 15 minutes. Then remove the plastic wrap from the bowl, rub skin off of the peppers and remove stems and seeds. Place peppers in a blender or food processor with mayonnaise, lemon juice, kosher salt, Sriracha and Thai chilis. Blend until smooth. Serve the roasted red pepper aioli with the Cornbread Mini-Muffins.

- Process garlic, peppers, mayo, and olive oil.

- You can either use roasted peppers in a jar or make them yourself. I make them myself. I roast in a 450 degree oven for about 30 minutes. After they have cooled, I remove the skin. Sometimes the skin comes off easily if you put them in a ziploc bag after they have cooled a little.

Velvety aioli is birthed by whipping egg yolks and oil together, but the result is worth every last calorie. And depending on what you eat it with, can be quite healthy! Here I've paired a silky, savory roasted red pepper aioli with steamed artichoke leaves. You simply dip the fleshy end of the leaves in the aioli and scrape the artichoke "meat" off with your teeth, discarding the rest! This is a low-carb, sugar-free, gluten-free, vegetarian snack that leaves you with a sense of indulgence!

- Place the egg yolks, garlic, cayenne and slat in the food processor. Puree until smooth, then add the red pepper and puree until smooth again.
- While the mixture is pureeing slowly pour in the oil. Puree until the mixture has emulsified to your desired consistency. Taste, then salt as needed. Cover and refrigerate until ready to serve.
- Fill a large pot with 2 inches of water and place a steaming basket over it. Cover and bring to a boil.
- Trim the artichoke stems off, and trim ¾ inch off the top of the artichoke flower. Pull off any damaged leaves around the base.
- Using kitchen shears, trim each point off the outer leaves.
- Squeeze lemon juice over the cut edges to reduce browning.
- Sprinkle with salt and place in the steam basket. Cover and steam the artichokes for 30-40 minutes, until a center leaf pulls out easily.
- Serve the artichokes with the aioli on the side for dipping! Or try it with fingerling potatoes.

BREAD CRUMB TOPPED HADDOCK WITH RED PEPPER AIOLI
This recipe originally came from Lidia Bastianich, one of my favorite cookbook authors and celebrity chefs. I lightened up her recipe a bit and served it with one of my own creations- a roasted red pepper, lemon and caper aioli.

- 1. To make the fish: Pre heat oven to 400 degrees. Lightly salt the fish on both sides, using about 1/2 tsp in all. Pour 2 T of the olive oil, lemon juice, white wine and an additional 1/4 tsp salt into a baking dish (I use a glass Pyrex) and whisk together well. Drop in the crushed garlic and stir with the dressing.
- 2. Lay the fish filets in the dish, turn and swish them around in the olive oil mixture so both sides are thoroughly moistened. Arrange them skin side down in the baking dish. I tuck the crushed garlic under the fish so it won't burn while cooking.
- 3. Toss bread crumbs in a bowl with the lemon zest, cayenne pepper and remaining salt. Drizzle with 2 T olive oil and toss bread crumb mixture well until evenly moistened. Spoon the seasoned bread crumbs on top of the filets in an even layer. Bake uncovered until crumbs are golden and the fish is cooked through, about 20-25 minutes.
- 4. To make the sauce: Combine all ingredients in a medium size bowl and whisk until combined. Serve sauce over fish and garnish with lemon slices.
CHICKEN WITH RED PEPPER AIOLI AND SHAVED FENNEL SALAD

- Put the chicken in a wide pot. Add the broth, olive oil, fennel fronds, thyme, garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper, then add enough water to cover the chicken and turn the heat to medium low. Poach the chicken, turning occasionally and keeping the liquid just below a simmer, until just cooked through, about 30 minutes (a thermometer inserted into the center of a chicken breast should register 155 degrees F to 160 degrees F). Remove the chicken to a plate with a slotted spoon and let cool to room temperature. Increase the heat to medium high and simmer the cooking liquid until the garlic is tender, about 5 more minutes; remove the garlic and set aside. Strain the cooking liquid; reserve 1/4 cup and set aside. While the chicken is cooking, place the red peppers directly on a stovetop gas burner over high heat and char on all sides, turning with tongs, about 10 minutes. (If you don't have a gas stove, char the peppers on a baking sheet under the broiler, turning occasionally, about 12 minutes.) Transfer to a bowl, cover with plastic wrap and set aside, 20 minutes. Peel the skin off the peppers with your fingers; discard the stems and seeds and chop.
- Make the aioli: Puree about three-quarters of the roasted red peppers in a blender with the mayonnaise, reserved garlic and 1 tablespoon lemon juice until smooth. Season with salt and pepper. Make the salad: Thinly slice the fennel bulbs (use a mandoline if you have one) and transfer to a large bowl. Finely chop the remaining roasted red peppers, then add to the bowl along with the parsley, the remaining 2 tablespoons lemon juice and the reserved 1/4 cup cooking liquid; toss.
