SPICY RED PORK AND BEAN CHILI



Spicy Red Pork and Bean Chili image

1/2 pound sliced bacon
4 pounds boneless pork shoulder, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large white onion, chopped
1 to 2 fresh jalapeño chiles, seeded and chopped
4 large garlic cloves, minced
2 teaspoons dried oregano, crumbled
1/3 cup chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne
14 1/2-ounce can beef broth
1 cup brewed coffee
1 cup water
28- to 32-ounce can crushed tomatoes with purée
2 (19-ounce) cans small red beans or kidney beans, rinsed and drained
Accompaniments: toasted salted pumpkin seeds , chopped red onion, torn fresh cilantro sprigs, diced avocado, lime wedges, sour cream, and warmed corn chips or tortilla chips

Steps:

  • Cook bacon in a 6- to 8-quart heavy pot over moderate heat, turning, until crisp. Transfer with tongs to paper towels to drain and pour off all but 2 tablespoons fat from pot. Crumble bacon. Pat pork dry and season with salt and pepper. Add oil to pot and heat over moderately high heat until hot but not smoking. Brown pork in about 6 batches without crowding and transfer with a slotted spoon to a plate. Add onion and jalapeños and cook over moderate heat, stirring, until softened. Add garlic, oregano, chili powder, cumin, and cayenne, then cook, stirring, 1 minute. Return pork to pot with any juices accumulated on plate and add broth, coffee, water, and tomatoes with purée.
  • Simmer chili, uncovered, stirring occasionally, until pork is very tender, about 2 hours. Stir in beans and bring to a simmer, stirring.
  • Serve chili with bacon and accompaniments.

2 1/2 pounds lamb from shoulder, boned and cut into 1/2-inch cubes

1 1/2 large Spanish onions, finely diced
6 cloves garlic, finely chopped
1 (15-ounce) can whole tomatoes, drained and pureed
1 tablespoon chipotle puree
3 tablespoons ancho chili powder
1 tablespoon pasilla chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 tablespoon dried Mexican oregano
5 cups chicken stock
1 (12-ounce) bottle dark beer
Dash ground cinnamon
1 to 2 tablespoons honey
2 cups cooked or canned black beans
Chopped cilantro leaves, for garnish

1 pint creme fraiche, Mexican crema or sour cream
1 tablespoon ground cumin
1 tablespoon fresh lime juice

2 red onions, finely diced

1 serrano chile, finely diced with seeds
1/4 cup freshly squeezed lime juice

4 Haas avocados, peeled, pitted and chopped

Steps:

  • Heat the oil in a medium saucepan over high heat. Add the lamb, in batches, season with salt and pepper, and cook until seared and browned on all sides. Remove the lamb to a plate with a slotted spoon.
  • Add the onion to the pan and cook until soft. Add the garlic and cook for 1 minute. Add the tomatoes, chipotle, and spices. Return the lamb to the pan, add the stock and beer; cover and cook at a simmer for over medium heat, about 1 hour, or until the lamb is tender and the mixture has thickened. After 30 minutes, check seasoning and add honey. During the last 15 minutes, add the cinnamon and cooked beans. Season with salt and pepper, to taste. Sprinkle with chopped cilantro. Ladle into bowls and top with a large dollop of Cumin Crema, Avocado Relish, and Red Onion Relish. Serve with fry bread on the side.
  • Whisk together ingredients in a bowl. Season with salt and pepper, to taste. Cover and refrigerate for at least 1 hour before serving.
  • Heat oil in a large saute pan over high heat. Add the onions, garlic, and chile to the pan and cook until soft. Add the lime juice and season with salt and pepper. Remove from the heat and stir in the cilantro.
  • In a large bowl, combine avocado, red onion, cilantro, chiles, lime juice, and salt and pepper. Fold until incorporated.
  • Combine flour, baking powder, milk powder, and salt in a large bowl. Cut the shortening in until the mixture is crumbly. Add the water and mix until the dough comes together. Place on a lightly floured surface and knead lightly until smooth. Cover with a dishcloth and let sit at room temperature for 1 hour.
  • Heat the oil in a large high-sided saute pan until it reaches 350 degrees F.
  • Divide the dough into 8 pieces and roll each piece out into a 4-inch circle. Fry the bread in the hot oil until golden brown on both sides. Remove to a sheet pan lined with paper towels and season with salt.

1 1/4 pounds Italian sausages (turkey or pork)
1 large onion, cut into 1/2-inch pieces
1 large red bell pepper, cut into 1/2-inch pieces
1 large green bell pepper, cut into 1/2-inch pieces
2 jalapeño chilies, seeded, chopped
1 tablespoon plus 2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 28-ounce cans crushed tomatoes in puree
1 15 1/4-ounce kidney beans, drained, rinsed
1 15-ounce can cannellini (white kidney beans), drained, rinsed
1 15- to 16-ounce can black beans, drained, rinsed
1 tablespoon balsamic vinegar or red wine vinegar
Sour cream
Chopped fresh cilantro

Steps:

  • Heat olive oil in heavy large saucepan over medium-high heat. Add Italian sausages and brown on all sides, turning occasionally, about 8 minutes. Transfer sausage to plate. Add chopped onion to pan and sauté 5 minutes. Add chopped bell peppers and chilies and sauté 1 minute. Add chili powder and cumin and stir until aromatic, about 30 seconds. Add crushed tomatoes and beans. Simmer 15 minutes to blend flavors. Cut sausage into 1/2-inch pieces. Add to chili and simmer until cooked through, stirring occasionally, about 10 minutes. Mix in vinegar. Season chili to taste with salt and pepper. (Can be prepared 2 day ahead. Cool and refrigerate. Before serving, rewarm over medium heat.)
  • Spoon chili into bowls. Top with sour cream and cilantro and serve.

1 1/2 cups stone-ground yellow cornmeal
1 1/2 cups all-purpose flour
1/4 cup brown sugar
1/4 cup granulated sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
2 large eggs
1 1/4 cups buttermilk
2 tablespoons honey
2 jalapenos, seeded and minced
2 pounds boneless rib eye steak
Kosher salt and freshly ground black pepper
4 teaspoons garlic salt
5 ounces olive oil
2 cloves garlic, minced
1 large onion, diced
5 1/2 ounces tomato paste
Two 15-ounce cans kidney beans
Two 14-ounce cans crushed tomatoes
2 cups beef broth

Steps:

  • For the jalapeno cornbread crumbles: Preheat the oven to 375 degrees F and grease a 12- by-10-inch pan with butter. Set aside.
  • Combine the cornmeal, flour, both sugars, baking powder, baking soda and salt in a bowl, then whisk and set aside. In another bowl, combine the eggs, buttermilk, honey and melted butter. Make a well in the center of the dry ingredients and add the wet ingredients; mix until combined. Fold in the jalapenos. Pour into the greased pan, then smooth with a spatula and bake, 10 minutes. Rotate the pan and continue to bake until risen and golden brown, 10 to 20 minutes more. Set aside to cool.
  • For the rib eye and red bean chili: Meanwhile, cut the rib eye into medium dice and add to a large bowl. Sprinkle with salt, pepper and 2 teaspoons garlic salt.
  • Heat 3 ounces olive oil in the bottom of a large, heavy-bottomed pot over medium-high heat until hot. Add the seasoned meat, in batches if needed, and brown on all sides, about 3 minutes. Remove the meat from the pot, then set aside in a bowl and add the remaining 2 ounces oil to the pot; heat until hot. Add the garlic and onions and stir until the garlic is fragrant, about 30 seconds. Stir in the tomato paste until combined, then pour in the beans and crushed tomatoes, stirring to combine. Stir in the beef broth, oregano, cumin, chili powder, butter, 1 tablespoon kosher salt and the remaining 2 teaspoons garlic salt. Bring to a low simmer and cook to concentrate flavors, 8 to 10 minutes. Stir in the browned meat, then cover. Allow to simmer for 25 minutes.
  • Meanwhile, crumble the cornbread into bite-sized pieces.
  • Ladle individual servings of chili into bowls. Top with the Cheddar and crumbled cornbread, then drizzle with the sour cream. Garnish with the scallions and serve.

This is traditionally a vegetarian dish, but I needed to use up some leftover pork shoulder. You can use any cut of pork you wish, of course. I like to start this dish off with my favorite sofrito (Recipe #444676), but if you don't want to use that just start with a finely chopped onion. We like to puree the tomatoes in the food processor, but this is not necessary or traditional. I drain the liquid and puree the solids, then recombine. I like the sweet onion flavor for this recipe.

Steps:

  • Heat oil in a large saucepan, over medium heat; add sofrito (or onion) and cook until slightly softened, about 3 minutes.
  • Add tomatoes and garlic and cook for 10 minutes; stir in white wine (or beer), and broth.
  • Stir in the lentils, thyme, cumin, soy sauce, chili, spices and oyster sauce, if using.
  • Cover, reduce heat, and simmer until lentils are tender and flavors develop, about 40 minutes, stirring occasionally; if lentils dry out, add water.
  • Stir in kidney beans and sugar (or Splenda) and cook for 10 minutes more.
  • Season with salt, if desired, stir in pork to heat through.
  • Serve over rice and corn.

5 c chicken broth
2 red peppers, diced
2 t salt
1 10oz pkg frozen corn
1 oz. unsweetened chocolate, chopped
Relish:
2 c diced red onions
3 T white wine vinegar
2 T olive oil
1/8 t salt
1/8 t sugar
1/2 c minced cilantro
2 avocados peeled and diced
grated cheddar
sour cream

Steps:

  • Cover beans with 3" water, bring to boil and cook 2 minutes. Remove from heat. Cover and let stand for 1 hour. Drain well (or soak overnight). Heat oil in heavy 5 qt. pot. Add garlic, chilies, onions,chili powder, cumin and oregano. Cover and cook until onions are tender, stirring occasionally. About 15 minutes. Increase heat to medium, crush tomatoes with their juices and add to onions. Add stock and beans and bring to a boil. Reduce heat, cover and simmer 1 hour, stirring occasionally. Mix in bell pepper and salt. Cover and cook until beans are tender, stirring occasionally, about 45 minutes. Mix in corn. Remove pot from heat. Add chocolate and stir until melted. Can be made 2 days ahead. Chill. For relish: Combine red onions, vinegar, oil, salt, and sugar in medium bowl. Let stand 30 minutes. Reheat chili if necessary. Mix cilantro into relish. Ladle chili into bowls. Top with relish and avocados. Serve with cheese and sour cream

6 ounces (about 30) dried New Mexican red chilies*, stemmed and seeded (wear rubber gloves)
7 cups water
2 large onions, chopped
8 garlic cloves, minced
3 tablespoons vegetable oil
1 tablespoon ground cumin
4 1/2 pounds boneless pork shoulder, trimmed of excess fat and cut into 1/2-inch pieces
a 28-ounce can tomatoes, drained and chopped
1 bay leaf
2 teaspoons salt
1 teaspoon dried orégano, or to taste, crumbled
a 19-ounce can (about 2 cups) kidney beans, rinsed and drained
sour cream as an accompaniment if desired

Steps:

  • In a large saucepan simmer the chilies in 6 cups of the water for 20 minutes, in a blender purée the chilies with the liquid in batches, and force the purée through a fine sieve into a bowl, pressing hard on the solids before discarding them.
  • In a large heavy kettle cook the onions and the garlic in the oil over moderate heat, stirring, until the onion is softened, add the cumin, and cook the mixture, stirring, for 30 seconds. Add the pork, the chili purée, the tomatoes, the bay leaf, the salt, the orégano, and the remaining 1 cup water and simmer the mixture, uncovered, adding more water if necessary to keep the pork barely covered, for 2 hours, or until the pork is tender. Add the kidney beans, simmer the chili, stirring occasionally, for 5 minutes, or until the beans are heated through, and discard the bay leaf. The chili may be frozen or made 4 days in advance, cooled, uncovered, and kept covered and chilled. Serve the chili with the sour cream.

1 onion, chopped
28 ounces crushed tomatoes
14 ounces diced tomatoes (with jalapenos if you like it spicy)
2 garlic cloves, crushed
1 1/4 cups white wine
1 1/4 cups vegetable stock
1 cup red lentil
1 teaspoon dried thyme
2 teaspoons cumin
1 tablespoon chili powder
3 tablespoons soy sauce
1/2 hot chili pepper, seeded and chopped
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon ginger
1/8 teaspoon clove
1 tablespoon oyster sauce
1 (16 ounce) can kidney beans
1 cup corn
2 teaspoons sugar
salt

Steps:

  • heat oil in pan and fry onion for 2-3 minutes, till softened.
  • add tomatoes and garlic, cook for about 10 minutes, then stir in white wine and vegetable stock.
  • stir in lentils, thyme, cumin, soy sauce, spices and oyster sauce.
  • cover and simmer 40 minutes or till lentils are cooked, stirring occasionally and adding more water if needed.
  • stir in kidney beans and sugar and cook 10 minutes more. season to taste.
  • Serve with cooked rice.

Great for a really cold winter day, this will surely warm you up! Red beans cooked in a rich, spicy tomato sauce.

1 -2 onion, chopped
2 -3 tomatoes, chopped
1 teaspoon turmeric
1 teaspoon garam masala powder
1/2 teaspoon salt
1 teaspoon whole cumin seed
1 teaspoon crushed red chili
2 small green chilies, chopped
1/4 cup oil
15 ounces red beans (drained and washed)
1 1/2 teaspoons garlic paste
1/2 teaspoon ginger paste
1/4 cup chopped cilantro

Steps:

  • 1. Put oil in a medium saucepan and let it heat for a few minutes on medium/high heat. Add cumin seeds and let it cook for about 30 seconds, then add onions and let it soften.
  • 2. Once onion is soft and a little transluscent add garlic paste and ginger paste and let it fry for about 30 seconds.
  • 3. Now add all the spices- turmeric, garam masala powder, salt and crushed red chilli. Cook until you can smell the spices (for about 40 sec.)
  • 4. Add tomatoes, green chillies, and cook until tomatoes are soft (taste a little if its not spicy enough then add some more green chillies, add more salt to taste).
  • 5. Add the red beans and stir with all thespices. Add about ¼ cup water and cover the pan. Cook on medium low heat for 10-15 min keep checking every 5 min to make sure the heat is not too high.
  • 6. After 10-15 min are up with a wooden spoon crush the beans (not completely all of them, just slightly so the crushed ones can create a paste).
  • 7. Add more water if its too dry as you crush and taste for salt add more if needed.
  • 8. Top with cilantro before serving .Served with warmed pita bread or dinner roll is best or with cucumbers sticks, salad and feta cheese.

1 medium eggplant cut into 1/2 inch dice
1 can black beans drained and rinsed
1 can dark red kidney beans, drained and rinsed
1 28 or 35-oz can Italian tomatoes, drained and chopped
1 tbsp ground ancho or chipotle chili powder
2 tsp oregano
2 tsp cumin
2 tbsp chopped pickled jalapenos
1-1/2 cups vegetable juice, preferably Trader Joe's Garden Patch (or Knudsen's Verry Veggie - same thing)

  • In a large deep skillet, preferably electric, saute onion, shallot, peppers, ginger and garlic in olive oil over moderately low heat, until softened. OR 2 small cans of kidney beans
3 cups water, divided OR 1 cup of water if using canned kidney beans
2 tsp. cumin
1 T. extra-virgin olive oil
1 medium onion, chopped
2 tsp. sea salt, divided
2 cloves garlic, minced
1 large green or red pepper, chopped
1 tsp. dried oregano
1/4 tsp. ground cinnamon
1/8 tsp. cayenne (optional)
2/3 cup quinoa, rinsed in warm water and drained
1 cup fresh or frozen corn
1-2 cups organic tomato sauce
Grated cheese for garnish (optional)
Ground beef, tempeh, or Italian sausage (optional)

Steps:

  • Drain soaking water off beans. Place beans in a large pot with cumin and water; bring to a boil. Simmer over low heat, covered, until tender (50-60 minutes) or pressure-cook using 2 cups water (45 minutes). Heat oil in skillet on medium heat. Add onion, salt, garlic, pepper and spices; saute for 5-10 minutes. Add rinsed quinoa and stir in. Add corn, tomato sauce and water to onion/quinoa mixture. Simmer together 20 minutes. Add cooked beans to other ingredients; simmer another 10 minutes. Top each bowl with a sprinkle of grated cheese if desired.

1/2 cup green pepper, chopped

1 tablespoon fresh cilantro, chopped
1 (15 1/2 ounce) can goya small red beans
1 (16 ounce) can diced tomatoes

  • Combine adobo, beef, onion, pepper, garlic, jalapeno and tomato paste.
  • Cook in large skillet over medium high heat until meat is browned.
