ZUCCHINI WITH CILANTRO CREAM image

Number Of Ingredients 6

2 tablespoons butter
2 large cloves garlic, minced
1 3/4 pounds zucchini, cut in 1/3-inch rounds
4 tablespoons chopped cilantro, divided
1/3 cup whipping cream
salt and pepper

Steps:

  • Melt butter in heavy skillet over medium heat. Saute garlic for 10 seconds. Add zucchini and 2 tablespoons cilantro, saute 5 minutes. Add cream and simmer 1 minute until juices thicken slightly. Season with salt and pepper. Sprinkle with additional cilantro.
