Zesty Cucumber Corn Salad image

This is another great salad for a party or as a fresh side dish to go with your favorite burger. Enjoy!

Number Of Ingredients 7

3 c fresh sweet corn
1 small each - red & green bell pepper, diced
1 red onion, slivered
2 large cucumbers, seeded if large - chopped
1 1/2 c zesty italian dressing
2 Tbsp each - sugar, rice vinegar, lemon juice
1 tsp each - kosher salt & pepper

Steps:

  • 1. Cook your corn and rinse with cold water to stop cooking process. Once cool, slice from cob - I use my mandolin.
  • 2. In a medium bowl, add peppers, onions, cucumbers, and corn - toss well.
  • 3. In another bowl, add all remaining ingredients and whisk well. Pour over vegetable mixture and toss well to coat. Cover and chill for 2 - 3 hours, before serving. Enjoy, it's mighty tasty.
