Wild Rice image

Yield About 1 1/4 cups

Number Of Ingredients 6

1/2 cup wild rice
1 tablespoon butter
1/4 cup finely chopped onion
Salt to taste if desired
Freshly ground pepper to taste
1 1/4 cups chicken broth

Steps:

  • Rinse the rice in several changes of cold water. Drain well.
  • Melt the butter in a small saucepan and add the onion. Cook, stirring, until wilted. Add the rice and stir. Add salt and pepper.
  • Add the broth and bring to a boil. Cover closely and let simmer 45 minutes or until rice ''blooms'' and is tender. If any liquid remains, uncover and cook until liquid evaporates, stirring occasionally.
