6 Bratwurst sausages (optional)
4.5 pints water
3 lbs potato (peeled, kept whole)
2 leeks, whites only (medium dice)
1 large onion (medium dice)
3 garlic cloves, peeled & kept whole
3 stalks celery (large dice)
2 tsp dried dill OR 1 tbsp fresh
juice from 2 lemons, 3 if not very juicy
salt and white pepper to taste.

Steps:

  • In a medium sized soup pot add water, potato, leeks, onion, garlic and celery. Cook until potato is tender. Remove 1 lb potato. Let cool for 5 min then large dice. Keep aside. Meanwhile, with hand held blender, puree the entire soup. Add dill, salt, pepper, lemon juice and bay leaves. gently stir in. Keep at a simmer. If you are using the brats, add them now. Allow to cook 10-15 min. Then add the diced potato being careful that they don't stick together. Can be served with one whole brat per bowl, or remove brats, slice and replace into bowl.
