Volcano Potatoes image

A novel way to present mashed potatoes. Can be prepared as center dish for the group or baked and served as individual portions

Number Of Ingredients 5

4 / 5 medium potatoes
- salt and pepper to taste
3/4 cup(s) hot milk
1/2 cup(s) shredded sharp process cheese
1/2 cup(s) whipping cream, whipped

Steps:

  • Pare potatoes. Cook, drain, and mash. Season with salt and pepper Whip potatoes with enough hot milk to make light and fluffy
  • Pile into greased 8 inch round baking dish, mounding into volcano shape. Make a crater in the center.
  • Fold cheese into whipped whipping cream and pour over top. Bake at 350 F about 20 minutes, or till lightly browned.
