VIETNAMESE STEAMED FISH image

Number Of Ingredients 11

For each serving:
7 oz raw tilapia
1 1/2" knob of ginger
1/3 small onion, sliced
1 medium scallion, julienned
1 shiitake mushroom, sliced
green chile (such as serrano) slices to taste
1/2 cup snipped dill
2 oz beer
1 Tbsp fish sauce
1 Tbsp fresh lime juice

Steps:

  • Wash and pat dry fish fillet. Salt and pepper both sides and place on a small plate. Julienne the ginger very thinly and place on top of fish. Top with slices of onion, sliced mushroom, julienned scallion. Dot with a few slices of chili (the serrano is very hot). Cover with dill. If time permits, let sit for 15 minutes. Bring water to boil in steamer and place plate in steamer inset. Pour beer around fish to a level of about 1/2". Place in steamer, cover and cook for about 9 minutes. Remove from heat, pour off beer, top fish with fish sauce and a generous squeeze of lime juice.
