Vidalia Onion Casserole image

This is a delicious side dish, especially on Thanksgiving. Goes well at church pot lucks, too! Make sure folks know it's onions they're eating though ... or there'll be lots of 'waste'. :o)

Number Of Ingredients 8

4 vidalia onions, peeled and sliced
5 Tbsp margarine
1/2 c creamed cottage cheese
1/4 c light cream cheese
2 medium eggs
1 c milk
salt and pepper, to taste
2/3 c grated parmesan cheese

Steps:

  • 1. Preheat oven to 400°. Spray a baking dish with PAM.
  • 2. Saute onions in margarine until transparent, not browned. Place onions in prepared baking dish.
  • 3. Mix together cottage cheese and cream cheese; set aside.
  • 4. Beat eggs; mix in milk.
  • 5. Combine with cheeses and salt and pepper. Pour over onions and sprinkle with parmesan.
  • 6. Bake for 25 minutes, or until golden brown.
