Veggies and Cheese Mini Pizzas image

Number Of Ingredients 8

4 pita bread (6 inches in diameter)
4 roma (plum) tomatoes, chopped (1 cup)
2 small zucchini, chopped (2 cups)
1 small onion, chopped (1/4 cup)
1/4 cup sliced ripe olives
2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
1/2 cup spaghetti sauce or pizza sauce
1 cup shredded mozzarella cheese (4 ounces)

Steps:

  • 1. Heat oven to 425°. Split pita breads in half around edge with knife. Place rounds on ungreased cookie sheet. Bake about 5 minutes or just until crisp.2. Mix tomatoes, zucchini, onion, olives and basil in medium bowl. Spread spaghetti sauce evenly over pita rounds. Top with vegetable mixture. Sprinkle with cheese.3.
