Veggie Omelet image

Eggs are a fast, high protein breakfast. As written, it's 1WW point.

Number Of Ingredients 9

4 eggs
3 tablespoon(s) mushrooms, chopped
2 tablespoon(s) green pepper, or any color, chopped
1 tablespoon(s) onion, chopped
2 tablespoon(s) shredded cheese, any variety
pan spray
salt, pepper, seasoned salt, to taste
2 tablespoon(s) salsa, to serve
fresh parsley, as garnish

Steps:

  • Spray skillet. When hot, add veggies. Saute until onion starts to soften.
  • Beat eggs lightly and add to sautéed veggies. Season with salt and pepper or seasoning of your choice.
  • Push eggs from edges as they set - in other words, make an omelet! OR just scramble eggs and veggies together.
  • When almost set, sprinkle with shredded cheese. Turn off heat, cover pan until cheese melts.
  • plate the eggs either as 1/2 omelet or per person or 1/2 of the scrambled eggs. Top with salsa and parsley.
