Steps:
- Spray skillet. When hot, add veggies. Saute until onion starts to soften.
- Beat eggs lightly and add to sautéed veggies. Season with salt and pepper or seasoning of your choice.
- Push eggs from edges as they set - in other words, make an omelet! OR just scramble eggs and veggies together.
- When almost set, sprinkle with shredded cheese. Turn off heat, cover pan until cheese melts.
- plate the eggs either as 1/2 omelet or per person or 1/2 of the scrambled eggs. Top with salsa and parsley.
