VEGETARIAN MINESTRONE image

Yield 5 Quarts

Number Of Ingredients 11

3 cups mixed dried beans (1/2 cup each: Great Northern, Lima, Red, Pinto, Pink, and Garbanzo)
1/2 cup olive oil
2 cloves garlic
1-1/2 cup finely chopped celery and leaves
3/4 cup finely chopped onion
2 cans (1 lb. each) quartered tomatoes
4 tsp salt
2 cups finely sliced zucchini
2 cups shredded cabbage
1/4 cup chopped parsley
1/2 tsp pepper

Steps:

  • Wash and drain beans. Put in large heavy kettle with 3 quarts water. Bring to boil. Boil 2 minutes. Remove from heat, cover and let stand one hour. Bring to a boil again, cover and let simmer 1-1/2 hours. Put oil in skillet, add onion, garlic, celery, and saute for 10 minutes. Do not brown! Add to beans and add tomatoes and salt. Cover, simmer about 45 minutes. Add cabbage, zucchini, and parsley. Simmer about 20 minutes, or until vegetables are tender. Add more pepper and salt to taste.
