Vegan Open-Faced ALT (Avocado, Lettuce, Tomato) image

A delicious and wholesome open-faced ALT on a whole grain English muffin. Enjoy this for breakfast, lunch, or dinner - or just as a filling snack!

2 tablespoons vegan mayonnaise (such as Fabanaise™)
1 whole-grain English muffin, toasted
1 avocado, sliced
1 small tomato, sliced
½ leaf lettuce, halved lengthwise

Steps:

  • Spread 1 tablespoon mayonnaise over each half of the English muffin. Add avocado and tomato slices. Top with lettuce.
