TUSCAN FARRO SALAD (OR BARLEY) image

Number Of Ingredients 13

2 c farro or barley
8 c water
2 tsp salt
1/4 each of olive oil and white balsamic vinegar
1/2 c red onion
6 garlic cloves
1/2 c finely chopped sun-dried tomatoes packed in oil
1 tbsp each of dried basil and oregano
1 tbsp fennel sees (optional)
3 c grape tomatoes - sliced in half
2 roasted red peppers - julienne strips
1 c shredded fresh basil leaves
1 1/2 coarsely chopped fat leave Italian parsley

Steps:

  • 1. Toast farro or barley x 8 min 2. Add water and 1 tsp salt. Cook x 25-30 min for farro and 40 for barley 3. Whisk oil and vinegar together with salt. Whisk in veges 4. Cool farro or barley 5. Mixed with veges x 4 hours. Stir in fresh basil and parsley just before serving
