GINGER AND CHILI GRILLED SHRIMP image

1/2 cup low-fat buttermilk
1 tablespoon freshly grated ginger
2 jalapenos, minced
2 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
18 jumbo shrimp (about 1-1/4 pounds)
2 ripe mangos, peeled and cut into 1 inch dice
Lime wedges

Steps:

  • Pour buttermilk into medium bowl and add ginger, chiles, garlic, S&P. Whisk to combine. Add shrimp and toss thorooughly. Marinate one hour. Soak wooden skewers in water. Thread 3 shrimp and 2 mango onto each skewer. Grill until shrimp is opaque and serve with lime wedges.
