Turkey Tortilla Soup image

Quick and easy, this turkey tortilla soup recipe is a tasty way to use turkey leftovers. It seems like a lot of chilies but trust us... it works and adds so much flavor. 1 tsp olive oil
1 c onions, chopped
1 pkg taco seasoning mix
6 c chicken broth
2 c turkey, diced
28 oz green chile, diced or 4-7 oz cans chopped
16 oz tomatoes, diced
10 oz corn, frozen
1/3 c cilantro, diced
1/2 c Monterey Jack cheese, shredded
1 pkg tortilla chips, enough to top each bowl

Steps:

  • 1. In a 5 qt. saucepan, over medium heat, saute onion in oil 3-4 minutes or until soft.
  • 2. Stir in chile, cook 1 minute. (If you can get fresh or frozen green chile that is best. If not, use four 7 oz cans of chopped.)
  • 3. Add tomatoes.
  • 4. Stir in taco seasoning packet.
  • 5. Add turkey.
  • 6. Add broth.
  • 7. Add corn.
  • 8. Reduce heat to simmer until soup is hot and bubbly.
  • 9. Add cilantro.
  • 10. To serve, spoon soup into bowls. Top with tortilla chips and grated cheese.
