TURKEY SPANAKOPITA WRAPS image

1 1/3# g. turkey (1 pkg)
1 T butter
olive oil
2 garlic cloves, minced
1 red onion, 1/2 minced, 1/2 chopped
1- 10 oz box frozen spinach, defrosted
1 t oregano
1/4 c feta crumbles
1 T grill seasoning
1/3 seedless cucumber, chopped
2 plum tomatoes, chopped
chopped romaine lettuce
3 naan breads
cucumber sauce (see recipe)

Steps:

  • heat large nonstick skillet over medium heat. Add butter to melt, sautee garlic and minced onion about 5 mins. Transfer onions and garlic to bowl to cool. Wring defrosted spinach dry add to onions and garlic. Mix in oregano, turkey, feta, grill seasoning, and adrizzle of olive oil. Form into golf ball size meatballs. Add oil to skillet and cook meatballs about 6-10 mins, until done. Cut naan bread in half,spread with cuke sauce, add chopped tomatoes, onions, and lettuce. Top with 2-3 meatballs, and wrap naan around. Serve with rice pilaf and greek salad.
