Tropical Rice image

This recipe uses just the juice from the cans of fruit. In order not to waste, you can make a delicious fruit dessert just by tossing the drained fruit with cool whip, flaked coconut, and sliced bananas.

Number Of Ingredients 6

1 can(s) (8 oz) pineapple chunks
1 can(s) (8 oz) mandarin oranges
1 tsp fresh ginger, grated
1 c chicken broth
1 c jasmine rice
2 Tbsp slivered toasted almonds, optional

Steps:

  • 1. Strain pineapple and mandarin juices, reserving 1 cup and discarding the rest. Pour the juice into a medium saucepan. Add the chicken broth and ginger.
  • 2. Bring juice to a boil, then add the rice. Cover and reduce heat to low. Simmer 15-20 minutes until rice is tender. Fluff. Add the slivered almonds, if using.
  • 3. Note: Use the pineapple and oranges for a nice fruit salad or a tropical drink.
