This recipe uses just the juice from the cans of fruit. In order not to waste, you can make a delicious fruit dessert just by tossing the drained fruit with cool whip, flaked coconut, and sliced bananas.

Steps:
- 1. Strain pineapple and mandarin juices, reserving 1 cup and discarding the rest. Pour the juice into a medium saucepan. Add the chicken broth and ginger.
- 2. Bring juice to a boil, then add the rice. Cover and reduce heat to low. Simmer 15-20 minutes until rice is tender. Fluff. Add the slivered almonds, if using.
- 3. Note: Use the pineapple and oranges for a nice fruit salad or a tropical drink.
