Tri-Color Pepper-Rice Ring image

Attract a little attention at the dinner table with this colorful ring of rice crowned with peppers and studded with yummy veggies and hot dog slices.

Number Of Ingredients 8

1 Tbsp. oil, divided
1 each green, red and yellow pepper, cut into thin strips
1/4 cup chopped onions
1 clove garlic, chopped
3 OSCAR MAYER Wieners, sliced
1 cup frozen corn, thawed
3 cups cooked long-grain white rice
1/2 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat 1-1/2 tsp. oil in large skillet. Add peppers; cook 6 min. or until crisp-tender, stirring occasionally. Spoon half into 6-cup ring mold sprayed with cooking spray. Spoon remaining peppers into bowl; cover to keep warm.
  • Heat remaining oil in same skillet. Add onions and garlic; cook and stir 2 min. Add wieners and corn; cook 5 min. or until wieners are lightly browned, stirring occasionally. Stir in rice and remaining peppers; cook 3 min. or until heated through, stirring frequently.
  • Stir in cheese; immediately spoon over peppers in mold. Press firmly into mold with back of spoon. Unmold onto plate.
