PARMESAN GARLIC QUINOA image

Yield 4 servings

Number Of Ingredients 10

1 C. quinoa, well rinsed
2 C. chicken stock or water
1 medium onion, cut into 1.5 in. strips
1 T. olive oil
2 cloves garlic, minced
2 t. dried basil
1/2 t. black pepper
1/2 t. salt
1/2 t. red pepper flakes
1/2 C. grated parmesan cheese (part of which is garnish)

Steps:

  • Rinse quinoa, don't be lazy..your stomach will thank me later. Heat olive oil in large sauce pan; saute onions 4-5 minutes. Add garlic for 1 minute, stirring so it doesn't burn. Add chicken broth (or water). Add quinoa. Stir and bring to boil. Turn to simmer and cook. Quinoa cooks in about 15 minutes, all the liquid should be absorbed. Stir in salt, basil, blalck and red pepper and 1/3 cup of parmesan cheese. Serve with additional cheese.
