Too Much Chocolate? Cake image

My fiance isn't a chocolate eater, which is great because that is more for me! He seems to think there is too much chocolate in this cake, but I think it is amazing. It is really, really rich. Icing recipe came from a friend's mom, so I can't take credit for that wonderful addition to the cake.

CAKE
1 package(s) chocolate cake mix
1 4oz package(s) instant chocolate pudding mix
1 to 2 cup(s) chocolate chips (to taste)
1/2 cup(s) strong black coffee
1/3 cup(s) applesauce, unsweetened
16 ounce(s) sour cream
3 - eggs
CHOCOLATE SOUR CREAM ICING
1 cup(s) chocolate chips
1/4 cup(s) butter (not softened)
1/2 cup(s) sour cream
1 teaspoon(s) vanilla
1/4 teaspoon(s) sea salt
2 1/2 cup(s) confectioners sugar (may need up to a 1/2 cup more depending on consistency)

Steps:

  • Preheat oven to 350 degrees and grease & flour a 10 inch bundt pan.
  • In a large bowl, combine cake mix, pudding, eggs, sour cream, applesauce and coffee until well blended. Fold in chocolate chips. Pour batter into prepared pan and bake for 1 hour. Cool about 10-15 minutes in pan then move to a cooling rack. Cool completely before frosting.
  • To make the icing Melt the chocolate chips and butter in a double boiler. Remove from heat and pour into a large heat safe mixing bowl. Add the sour cream, vanilla and salt and beat with a mixer. Slowly beat in the confectioners sugar until it reaches a good spreading consistency.
