Tomato Pie image

I have been obsessed with this pie since I heard about it, years ago at a family reunion. I found a recipe in an old southern living cookbook. I tweeked the recipe, with a few things like the garlic salt and extra cheese. and I'm very happy I did, the only thing that can make this better would be to add bacon. Sadly I didn't have any. I served it with dinner. But I had a piece for breakfast, cold and it was just as good as the night before.

Number Of Ingredients 11

1 package(s) frozen pie crust (deep dish)
4 medium red tomatoes sliced
3/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/4 teaspoon(s) garlic salt
5 - green onions sliced
1/4 cup(s) fresh basil (if using dried then use 1 tsp.)
1/2 cup(s) mayonaise
1 cup(s) monterrey jack cheese (shredded
1 cup(s) italian blend cheese (shredded

Steps:

  • Dock and pre-bake pie crust at 400 for 9 to 10 mins.
  • Place flour, salt, pepper and garlic salt in Ziploc bag. Add sliced tomatoes, shake to coat
  • layer tomatoes slices in pre baked pie crust.
  • mix mayonnaise with cheeses until blended, spoon over top of tomatoes, spreading to the inside edge of the crust.
  • Bake at 375 for 25 min. Let cool 5 mins. Serve
  • Refrigerate left overs
