Tomato Basil Soup I image

A savory tomato basil soup for the down-home type

1 tablespoon olive oil
2 teaspoons minced garlic
¼ cup minced onion
¼ cup tomato paste
1 quart chicken broth
1 cup diced tomatoes
2 teaspoons dried basil
½ teaspoon dried marjoram
¼ teaspoon dried oregano
⅛ teaspoon dried thyme
¼ cup dry white wine
1 bay leaf

Steps:

  • In a large saucepan over medium heat, cook garlic and onion in oil until onion is translucent. Stir in tomato paste and cook until the color is rusty. Pour in chicken broth, and stir in tomatoes, basil, marjoram, oregano, thyme, bay leaf and wine. Bring to a boil, then reduce heat and simmer 30 minutes.
