- Melt 1 tbsp. butter in medium saucepan Saute garlic and leeks until soft add remaining butter and melt add flour and cook, stirring constantly about 5 min add milk slowly, whisking until smooth Cook for about 5 minutes until desired consistency Add cheese and cook until melted add milk to thin if necessary Sauce should resemble medium thick gravy in buttered 9x13x2 casserole, alternate layers of potato and sauce. Top with sauce Cover and cook 400F for 1 hour Uncover sprinkle with a little cheese (optional) and cook uncovered 30 - 45 min recover and cook another 30 min or until potatoes feel done when pierced with a fork Let stand 15 minutes.
