Three-Bean Tacos image

This is a delicious taco recipe without meat. It's very flavorful, and you don't even miss the meat. When you want something quick and you don't have any meat, this is wonderful.

1 teaspoon olive oil
1 cup diced onion
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 tablespoon chili powder
2 teaspoons dried oregano
1 teaspoon ground cumin
1 garlic clove, minced
1 cup garbanzo beans, rinsed and drained
1/2 cup black beans, rinsed and drained
1/2 cup pinto beans, rinsed and drained
8 ounces tomato sauce
12 taco shells
3/4 cup shredded iceberg lettuce
3/4 cup diced tomato
1/2 cup sharp cheddar cheese, shredded
1/2 cup salsa

Steps:

  • Heat oil in a large skillet over medium-high heat until hot.
  • Add onion, bell peppers, chili powder, oregano, cumin, and garlic and saute for 2 minutes.
  • Add garbanzo beans, black beans, pinto beans, and tomato sauce.
  • Bring to a boil and reduce heat.
  • Simmer for 20 minutes or until thick.
  • Heat taco shells and spoon 1/4 cup of the bean mixture into each taco shell.
  • Top with toppings.
