THE BEST SWEET POTATO SOUFFLE image

Number Of Ingredients 12

4 cups sweet potatoes, boiled soft but not mushy
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp salt
1/3 stick butter, melted
1 tsp vanilla
Pecan topping:
1 cup brown sugar
1/2 cup flour
1/3 stick butter
1 cup chopped pecans

Steps:

  • Smash potatoes so it gets smooth with small lumps. Mix all ingredients together except topping. Put in casserole dish. Top with pecan mixture. Bake at 350 degrees for 45 minutes.
