Classic penne alla arrabiata image

This is a classic Italian pasta dish. I got the recipe years ago from my friends mom, who was originally from Italy, so you know it's the real deal. Serve w/ homemade garlic bread and a glass of chianti, and you'll feel like you are in italy.

Number Of Ingredients 13

1 pound(s) penne pasta, i used ronzoni smart taste
2 tablespoon(s) olive oil, extra virgin
1 cup(s) red onion, thinly sliced
2 teaspoon(s) minced garlic
6 ounce(s) genoa salami, cubed
1/2 teaspoon(s) red pepper flakes
2 - 14.5 oz cans diced tomatoes, w/ juice
1 tablespoon(s) tomato paste
1 tablespoon(s) light brown sugar
1 tablespoon(s) balsamic vinegar
- salt and pepper to taste
1/3 cup(s) fresh basil, torn into pieces
1/4 cup(s) grated fresh parmesan cheese.

Steps:

  • Cook pasta as directed, reserving 1/4 cup cooking water, drain. Heat oil in lg skillet over med-high heat. Add onion and saute for 5 mins.
  • Add garlic, salami and red pepper flakes, saute 7 mins or until fragrant. Add tomatoes w/ their juice, tomato paste, brown sugar, and vinegar.
  • Stir well. Reduce heat to medium, simmer for 15 mins. Season w/ salt & pepper. Transfer pasta to lg serving bowl, spoon sauce over pasta, toss to coat. Sprinkle w/ bail and parmesan cheese.
