THAI-INSPIRED SUNOMONO WITH JALAPENO, CILANTRO, AND BASIL image

Number Of Ingredients 10

1/3 cup (or more to taste) rice vinegar
1 tablespoon (or to taste) sesame oil
1 tablespoon (or to taste) white sugar
1 tablespoon (or to taste) fresh ginger, minced
1 tablespoon (or to taste) lemongrass, minced
2 teaspoons (or to taste) soy sauce
2 cucumbers, thinly sliced
1 (or to taste) jalapeno pepper, thinly sliced
1/2 bunch (or to taste) cilantro, coarsely chopped
2 sprigs (or to taste) fresh basil, coarsely chopped

Steps:

  • Whisk rice vinegar, sesame oil, sugar, ginger, lemongrass, and soy sauce together in a large bowl.
  • Stir in cucumbers, jalapeno pepper, cilantro, and basil.
  • For stronger flavor, refrigerate overnight.
  • Note: Substitute apple cider vinegar (e.g. Bragg) for the rice vinegar if desired. Peanut butter can work instead of roasted sesame oil in a pinch.
  • Note: I haven't tried them, but fish sauce or hoisin might be great toppings as well.
