THIS RECIPE HAS ALL THE MAKINGS FOR MY SWEET TOOTH. PECANS, COCONUT, BROWN SUGAR. FRUIT COCKTAIL AND OF COURSE, SUGAR.

1 1/2 c sugar
2 eggs
2 c unbleached all-purpose flour
1 can(s) fruit cocktail in syrup (16 oz can)
2 tsp baking soda
1/4 c brown sugar
1 c chopped nuts
INGREDIENTS FOR THE ICING:
1 stick butter
1 c coconut
3/4 c brown sugar
1/2 c evaporated milk

Steps:

  • 1. PREHEAT OVEN TO 325 DEGREES. GREASE AND FLOUR A 9 X 13 PAN. MIX ALL INGREDIENTS EXCEPT BROWN SUGAR AND NUTS.
  • 2. POUR BATTER INTO THE 9 X 13 PAN. COMBINE BROWN SUGAR AND NUTS AND SPRINKLE OVER BATTER.
  • 3. BAKE FOR 40 MINUTES.
  • 4. REMOVE CAKE FROM OVEN. THEN FIX THE ICING. BOIL COCONUT ICING IN A SAUCE PAN FOR 2 MINUTES. SPOON OVER CAKE WHILE HOT.
