Tater Gem Casserole image

My children always loved this recipe when they were young. This casserole, a green salad and some cheddar cheese biscuits was pretty much the comfort meal of choice in the winter. It can be made with ground chicken, turkey, pork or beef. I must say my preference is pork.

Number Of Ingredients 7

1 1/2 kilograms ground pork
1 can(s) cream of mushroom soup
2 cup(s) frozen cubed vegetables
1 medium onion (finely chopped)
2 teaspoon(s) garlic powder
1 package(s) tater gems
1 1/2 cup(s) shredded sharp cheddar cheese

Steps:

  • In large bowl, add ground pork, salt & pepper, frozen vegetables, chopped onion, garlic powder and 2/3 of the condensed cream of mushroom soup and mix all together.
  • Spread meat mixture in 9" x 13" casserole dish. Arrange tater gems across top of meat mixture. To remaining 1/3 can of soup, add water to top of can and mix together with soup. Pour over tater gems that you have lined up in dish.
  • Place casserole in 375 deg. oven for approx. 75 mins. (I always place casserole in oven on cookie sheet to catch any spills. Saves on oven cleaning.)
  • Sprinkle grated cheese over tater gems and return to oven until cheese is melted (about 5 - 8 mins.) Remove from oven and let stand for at least 10 mins. before serving.
