Tangy Yellow Squash image

You can leave out the bell pepper if desired. My husband likes it better without them.

Number Of Ingredients 10

3 medium yellow squash, thinly sliced
1/2 cup(s) green onion, thinly sliced
1/2 cup(s) celery, thinly sliced
2 tablespoon(s) red wine vinegar
3/4 cup(s) sugar
1 clove(s) garlic, crushed
1 teaspoon(s) salt
1/2 teaspoon(s) pepper
2/3 cup(s) cider vinegar
1/4 cup(s) green bell pepper, diced

Steps:

  • Combine vegetables in a large bowl. Toss Lightly.
  • Combine remaining ingredients. Mix well.
  • Pour over vegetables and chill 12 hours.
  • Drain and serve.
