Sweet & Savory Scrambled Eggs image

This dish is so good, it shows what a few ingredients can do. I am craving it like crazy, it is quick and easy to make with excellent results. Really easy to vary. I hope you will enjoy.

Number Of Ingredients 11

1 small sweet onion, coarsely chopped
2 tbsp olive oil
1 clove garlic, minced, optional
12 grape tomatoes, coarsley chopped
1 tsp white sugar
1/2 tsp fresh oregano leaves
1/2 tsp fresh thyme leaves
4 large eggs
1/2 tsp fine sea salt, (or taste)
fresh ground black pepper (to taste)
1 tbsp fresh parsley, finely chopped (garnish)

Steps:

  • 1. Heat the oil in a frying pan and add the onions and saute for 3 - 5 minutes, then add the garlic, stirring to keep from burning.
  • 2. Next add the chopped tomatoes, sugar, oregano and thyme and cook on medium heat for 3 - 5 minutes or until the mixture thickens a bit.
  • 3. In a small bowl, whisk the eggs with salt & pepper and slowly add them to the pan. Lower the heat and stir constantly until cooked about 3 - 5 minutes.
  • 4. Garnish with parsley and serve with a nice crusty bread.
