SWEET POTATO CASSEROLE image

Yield 8 - 10 servings

Number Of Ingredients 12

4 1/2 lbs sweet potatoes
1 C sugar
1/2 C butter, softened
1/4 C milk
2 large eggs
1 tsp vanilla
1/4 tsp salt
1 1/4 C cornflakes, crushed
1/4 C chopped pecans
1 T brown sugar
1 T butter, melted
1 1/2 C miniature marshmallows

Steps:

  • 1. Preheat oven to 400 degrees. Bake sweet potatoes at 400 for one hour. Peel and mash. Reduce oven heat to 350 degrees. 2. Beat mashed potatoes, sugar and next five ingredients until smooth. Spoon into greased 11 x 7 baking dish. 3. Combine cornflakes and next three ingredients in a small bowl. Sprinkle over casserole in diagonal rows, 2" apart. 4. Bake at 350 for 30 minutes. Remove from oven and let stand for 10 minutes. Sprinkle marshmallows between cornflakes. Bake 10 minutes. Let stand a few minutes before serving.
